I've just started looking into using my slow cooker more and I'm in need of good main meal chicken or beef recipes. Any suggestions?

Place sweet potatoes in bottom of cooker, place turkey chops on top of potatoes, add apricot spread to the top of chops. pour a 14 oz can of chicken stock. add bay leaves. cook for 6-8 hours.

Hi Naomi! I love to use the crock pot for my meals - it is soooo easy! I have a cookbook called Busy People's Slow-Cooker Cookbook that I use all the time! I copied a couple of my favorites for you. Did you ever think to make desert in yours? I do! I copied a recipe for that too! I hope you enjoy these.



Chicken Enchilada Casserole

Slightly spicy and oh, so good.



2 (10-ounce) cans mild enchilada sauce

2 (10-ounce) cans chicken breast in water, drained

1 cup fat-free sour cream

1 (8-ounce) bag fat-free shredded cheddar cheese

1 (11-ounce) package fat-free tortillas



· Spray a slow cooker with nonfat cooking spray.

· In a large bowl mix the enchilada sauce, chicken, and sour cream together until all of the chunks of chicken are shredded and the sauce is well blended.

· Place one-fourth of each of the following in layers in the slow cooker: sauce, cheese, and tortillas. Some of the tortillas have to be torn in order to fill in the gaps between the whole tortillas and the edge of the slow cooker. End with the sauce on top.

· Cover and cook on low for 2 to 2 1/2 hours. This recipe does not do well cooked on high.

· Cut the casserole into six pie-shape pieces.



Yield: 6 servings





Herbed Beef Tenderloin with Seasoned Potatoes & Buttered Mushrooms

Put into a slow cooker before a long day away and come home to a mouth-watering aroma that’s delicious and ready to eat.



2 pounds beef tenderloin, fat removed

1 pound bag frozen, seasoned diced potatoes

6 ounces fresh sliced mushrooms

2 plus 1 tablespoons fat-free Ultra Promise

1 1/2 teaspoons dried thyme

1 1/2 teaspoons dried basil

1 teaspoon garlic salt, optional



· Spray a slow cooker with nonfat cooking spray.

· Rub all sides of the beef with the basil, thyme, and garlic salt.

· Place the beef tenderloin on the outer rim edge of the slow cooker. The center will be hollow.

· Take 2 pieces of foil about 18 inches long.

· Fold the seams together along the side.

· Spray the foil with nonfat cooking spray.

· Place the diced potatoes in the center of the foil. Spread 2 tablespoons of the Ultra Promise over the frozen diced potatoes.

· Fold the foil (as you would a gift package) to seal in the flavor of the potatoes.

· Place the potatoes in the center of the slow cooker and beef.

· Spray another 18 inches of foil with nonfat cooking spray.

· Place the mushrooms in the foil. Dab 1 tablespoon of fat-free margarine on top of the mushrooms.

· Sprinkle lightly with the garlic salt if desired.

· Fold the foil (as you would a gift package) to seal in flavor.

· Place the mushrooms on top of the potatoes and beef.

· Cover the cooker and cook on low for 8 to 10 hours or on high for 4 to 5 hours.

· Serve the juices in bottom of slow cooker on the side.



Yield: 6 servings





Black Forest Spoon Dessert

Prepare, stir, cook, and serve this dish all from one slow cooker. It’s absolutely delicious on cold, blistery days, and clean-up could not be easier; there’s no bowl to wash.



1 (20-ounce) can light cherry pie filling

1 (18 1/4-ounce) box chocolate cake mix, butter recipe (I use Betty Crocker Super Moist.) Do not make as directed on box.



· Preheat a slow cooker to high for 10 minutes.

· Spray the cooker with nonfat cooking spray.

· In the cooker stir together the pie filling and cake mix until there is no dry cake mix visible. The batter will be very thick and lumpy.

· Place a paper towel on top of the slow cooker.

· Put the slow cooker lid on the paper towel.

· Cook on high for 2 1/2 to 2 3/4 hours or until a knife inserted in the center comes out clean.

· Serve directly from the cooker. Do not invert this cake.



Yield: 15 (1/2-cup) servings

don't know a name for it but all you do is -cut of chunks of ham - cut chucks of red potatoes - and cut fresh green beans up, put it all in the slower cooker add water till full and spoon ful of butter and salt and pepper and cook for 5-6 hrs. when about to serve add more salt to what u desire

Easy Taco Filling



3-4 boneless /skinless chicken breasts

1 can chicken broth

or

1 chicken bouillion with 1 1/2 c water

1 taco seasoning packet



Place chicken crock pot then add rest of ingredients.

Cook on high for 3-4 hours

or low 6 hours.



Remove chicken and shred. Place back in crock pot with liquid.

This chicken can be used for a number of meals: tacos, burritos, tostadas, enchiladas, quesadillas. And it's great to freeze!

I have another one for bar-be-quepulled pork.

One 4-5 lb pork shoulder or butt

1 bottle of root beer



Set slow cooker to low and cook all day for 8-10 hours.

Remove after cooking and pull apart with two forks on board or in a bowl. Add your favorite bar-be-que sauce (I like Sweet Baby Rays) mix the whole bottle and reheat in the cleared out slow cooker. If you use the liners you can remove the liner and reheat the pork in the slow cooker.

really great beef roast recipe. put in your piece of meat, pour over a can of cream of anything soup,(i use asparagus) then a can or 400ml beef consume. If you can't find this just add 400ml water and 2 beef stock cubes. add some garlic if you like it and then turn on. You also can add your potatoes and other veg if you don't want to do anything later, they taste great, but just don't add your peas and corn until just before serving. This is the best, moist, tender way to cook Beef roast.

Put your potaoes and carrots in bottom of crock pot place a whole chicken (like You would roast) salt and pepper thyme on top and add 1 cup of chicken broth or water. Cook all day on high at least 5 hours . slice your chicken you can add flour to thicken or i prefer to use juices next day as a base for my chicken soup. add veggies (celery carrots onions (peas, leeks,) whatever you like and any left over chicken cut on high 3 hours or 5 on low till veggies done. 2 meals from one.

Try the McCormick Slow Cooker seasoning packets. It tells you what it is on the front, and on the back it has recipes. Two of my faves are chili and hearty beef stew.

White Chicken Chili



2 wholed cooked chicken breasts diced

48 oz jar of Great Northern beans (all, do not drain)

1 16 oz. jar salsa

1 can of chopped green chilis (juice too)

1 or 2 tsp cumin

3 cups chicken broth

Shredded or cubed Monterey Jack cheese.



*Add more chicken broth if you want it thinner*



Add all ingredients except the cheese. Cook on low for 6-8 hours. Add cheese in the bowls when serving. Yummy! I also recommend the crock pot liners! Saves on clean up!

i always just buy boneless pork ribs and a good bbq sauce and pour them over the ribs in the crock pot and put them on low and let them cook 4-6 hours or whenever they fall apart and are very tender and its so good!

Roast/carrots,potatoes and onions,Aujus gravy poured over it.Little salt and pepper and a dash of accent to taste.

Chicken/cream of mushroom,cream of chicken,and cream of celery,add a little water or milk and some pepper to taste.You could add rice to it to.

The BEST slow cooker recipe book ever that I use all the time is called "Fix It and Forget It". It has been around for a few years and they often update it, so you may be able to find it on Amazon or eBay or defnitely at a bookstore. It is well worth purchasing. It offers several versions of recipes for the same meal that you can try. They are very simple and taste delicious. If you ever use your crock pot, get this recipe book. You'll love it and use it all the time! Enjoy!

Just put beef curry in crockpot for dinner 2nite.



Ingredients as follows.



1 kilo stewing beef



1 large onion (chopped)

2 tablespoons fish sauce

1 can coconut milk



Half jar of massaman curry paste



Place all ingredients in slow cooker and cook on low setting for 8 hours.

I've got a couple great ones! the 1st is beef stroganoff, which calls for: 1/2-1 lb cut up round steak, a pkt of lipton onion soup mix, a can of cream of mushroom soup, soy sauce to taste, and a sm container of sour cream...dice up round stk and put it along with the other ingredients(except sour cream) in crockpot on low for 6 hrs...add sour cream right before serving...if u like fresh mushrooms, they are really good in this recipe also!



the next recipe, swiss steak, calls for: 1 lb round steak cut into individual portions, 2T flour with salt and pepper put into a small plastic bag, a small onion sliced, 1 c celery diced, 1c fresh carrots diced, and a 15 oz can tomato sauce. shake pieces of meat in bag with flour...divide sliced onion into rings and put in bottom of cooker, then put breaded meat on top; put carrots and celery on top of meat, then add tomato sauce. cook on low for 6-8 hrs. yum!

yeah, get a boston butte with bone in and put it in the crock pot, add a cup of cider vinegar or white vinegar, and a bottle of any kind of barbque sauce. Add salt and pepper to taste and let simmer. If the meat is big, just add another bottle of barbque sauce.

The thing with crockpots is that you can't go wrong!! You can buy the crockpot dinners in the freezer section of your local grocery store and all you need to do is add water to it. Also, the beauty of a crockpot is that you can just throw what ever you like in it and go.



My Family favs are Chili Con Carne

Take a beef roast put it in the crockpot with Garlic Salt and Chili Powder to taste. Let sit for however many hours your crockpot cooks for and if you need to add water every so often to keep meat from drying out, do so. Also, the last hour taste it and add more seasoning if necessary and diced tomatoes, onions, cilantro, etc if you like. Enjoy!!

1# of small white beans (soak overnight and rinse)

3 large chicken breasts ( can be frozen )

2 cans diced tomatoes

1 large tlbs minced garlic

1 large chopped onion

1 small can chopped green chilies

1 can chicken broth

salt & pepper to taste

top with water

cook on high for 8-10 hours



the chicken falls apart, stir and serve with cornbread

The best chicken and pasta recipe is 1lb chicken breasts, 1 bellpepper cut up, 1 zucchini cut up, 1 medium onion cut up, 8 oz mushrooms and 1 jar of your favorite pasta sauce. Throw it all in the crock pot in the am, for 6-8 hours. I the evening all you have to do is cook some noodles and you have a great meal

beef and buttenut squash curry

slice onions cube beef and butternut squash chop some garlic! throw it all in the slow cooker and add some spices i use turmeric, cumin, ginger, chilli powder salt and pepper and a few cloves put enough water in to cover the food and cook for 6-7 hours!! serve with rice my kids love it and you can make it as spicy, or not, as you like!!

Crockery Pot Meatballs



From the Kitchen of: Pepper



These meatballs are good served over egg noodles.





1 1/2 lbs. extra-lean ground beef

1 c. dry breadcrumbs

1/2 c. egg substitute

1/3 c. chopped fresh parsley

2 tbsp. minced fresh onion

1/3 c. ketchup

2 tbsp. brown sugar

1 tbsp. lemon juice

1 can jellied cranberry sauce (16 oz.)

1 bottle chili sauce (12 oz.)

Parsley sprigs (optional)



Combine first 5 ingredients in a large bowl; shape mixture into 30 (1 1/2 inch) meatballs.



Combine ketchup, sugar, juice, and sauces in a Crockery Pot; gently stir in meatballs. cover with lid; cook on low for 8 to 10 hours. Garnish with parsley, if desired.

All Day Crockery Pot Beef.



From the Kitchen of: Pepper

1-1/2 lbs. beef roast

1/2 tsp, pepper

2 cloves garlic

1/2 env. onion soup mix

2 tsp. Worcestershire sauce

1 tsp. steak sauce

3 carrots, diced

2 ribs celery, diced

1 green bell pepper, chopped

1 yellow onion, cut into rings

1/2 c. water

1/2 c, tomato sauce



Cut beef into serving sized portions. Use more beef if you need more than 6 servings. Brown beef in a bit of oil. Place the vegetables into bottom of Crockery Pot. Sprinkle the beef pieces with fresh ground black pepper, minced garlic and the onion soup mix. Place on top of the vegetables. Mix the steak sauce and Worcestershire sauce in a small bowl with about 1/2 cup water and 1/2- cup tomato juice. Pour this over the meat. turn to low, cover and cook for 7-9 hours. When ready to serve, ladle meat and vegetables out of pot with a slotted spoon. Use the liquid as is or turn Crockery Pot to high and thicken liquid with a little flour or cornstarch.



NOTE: Keep the Crockery Pot covered as much as possible throughout cooking time. A Crockery Pot can be used to cook this type of meal for a varied amount of time, depending on your schedule. It is not important that you take the meat and vegetables out at a specific amount of time. One or two hours either way usually makes no difference.

Our favorite slow-cooker recipe is a super easy pot roast recipe. Here it is:



Place roast in a slow cooker.

Pour 1 envelope Lipton Onion Soup Mix over roast.

Pour in enough Coke (or other cola flavored soda) to cover the roast.

Cook on low for 8-10 hours, or on high for 6-8 hours, depending on size of the roast.

That's it!



You can vary the recipe and throw in some chopped carrots and/or potatos to cook with the roast, and that turns out pretty good too. Our slow cooker is kind of small, so we usually just stick to the roast in there. I like to cook the roast on high for about an hour, then on low for about 5 hours. We don't use a large roast, as it is only the two of us eating it. But this meal is so easy, we make it a few times a month. The house also smells FANTASTIC while you are cooking!

If your family likes a good soup; I've got one for you. It's called eight can soup. Brown 1 - 1 1/2 lb of ground chuck ( I use ground venison ) and drain. Put the browned meat in the bottom of the crock pot. Add all these ( undrained ) : 1 can of corn, 1 can of mixed vegetables, 1 can of tomato soup, 1 can of vegetable soup, 1 can of rotel tomatoes, 1 can of diced tomatoes, 1 can of chili with beans, & 1 can of chili without beans. Stir and cook on low for 8 - 10 hours. So good and easy!
