Homemade Lasagna and Pizza

Anybody have any simple/easy recipes for homemade pizza and lasagna? Tried the boxed lasagna and my son wouldn't eat it. My family loves pizza so I want to try my hand at making it from scratch.

Here's my tip for the pizza. I buy the frozen dough (unbaked), thaw it an roll it out in flour. Then I cover my pizza paddle with cornmeal, lay down the dough, put on the toppings and slide it into the oven on my baking stone.

If you don't have the paddle and the stone, just put cornmeal in the bottom of your baking pan (cookie sheet) and build your pizza on top. The cornmeal keeps it from sticking and gives it the pizzaria crunch.

Once you master all of that, you can decide to try the dough yourself. I'm not there yet. :)

Substitute ricotta cheese for cream cheese. I mix garlic powder and any italian seasons that I have on hand in with the cream cheese. Layer as you would. I also add 1 pound browned burger and 1 pound browned, ground spicy sausage mixed together. Never had any NOT like it. :)

Easy Microwave Lasagna

9 uncooked lasagna noodles (regular not oven ready)
1 32 oz jar or can of spaghetti sauce
1 lb ground meat (I mix beef and Italian sausage) - brown and drain
16 oz carton small curd cottage cheese
1 tsp Italian seasoning
1/4 tsp pepper
8 oz package mozzarella cheese, shredded
1/2 c grated parmesan cheese

Add spaghetti sauce to browned meat. Warm through. Set aside
Mix seasoning with cottage cheese. Set aside.

In a oil sprayed 7 X 11 glass dish, spread a spoonful of spaghetti sauce.
Layer 3 uncooked noodles, 1/3 of the cottage cheese mixture, 1/3 spaghetti sauce mixture and 3/4 c mozzarella cheese. Repeat. Repeat (but you won't have the full amount of cheese.) Top with parmesan cheese.

Place six toothpicks between the pasta noodles. This will hold the waxed or parchment paper off the lasagna. Lay the paper over the top.

Microwave HIGH for 10 minutes, microwave at 40% power for 35 minutes. Let set for 10 minutes before serving.

1 Pilsbury pizza crust
1 Can of pizza sauce
1 bag of your favorite cheese
your favorite pizza toppings. Or you can skip the sauce and use the packaged bbq beef and top it with colby or pepper jack cheese. Bake according to the pizza crust directions. You can also use ranch dressing and use chicken. It depends on what your family likes.

This is fast and easy

1 box of lasagna noodles
1-2 lbs hamburger, browned and drained of grease
1 Tbsp oregano (optional)
1 Tbsp garlic salt (optional)
1 large container cottage cheese
2 eggs
1 large jar spaghetti sauce
shredded mozzerella cheese ( the more you add,the less juicy the lasgna)

Fry hamburger, drain grease, and add spaghetti sauce. In a bowl mix rest of ingredients together, except noodles. If you have regular lasagna noodles, cook them. Or you can use no cook noodles. Layer in a 9x13 pan. Hamb., noodles, cheese mixture,and repeat. Top with alil' sauce. Cover with aluminum foil. Bake at 350 degrees for 1 hour. Last 10 minutes cook uncovered. You can sprinkle alil' shredded cheese of top if you want.

-Crockpot Lasagna-

I thought this was strange the first time I seen it made but its great and really easy and its crockpot so you can just make it and leave it too.

2lb Ground Hamburger

Mozzarella Cheese

Parmesan Cheese

1-2 jar Classico Sauce, (Any flavor you prefer)

1 Large Cottage Cheese

1 Large Box Lasagna Noodles

Brown hamburger meat. Drain. Add sauce (amount depending on how saucy you want your lasagna, i usually use a 1 1/2 jars).

Layer in Crockpot in order and continue to top:


Meat sauce

Cottage Cheese

Mozzarella Cheese

Parmesan Cheese

(each layer thickness to fit you your taste, if you want it cheesier add a little more cheese, meatier more meat, ect)

Cook on high 4 1/2 hours or until noodles are done

can test by dropping a butter knife vertically into the lasagna, if it cuts through the layers and falls quickly the noodles are usually done

Brown 2 lbs. meat and season according to taste. Add tomato/ spaghetti sauce (60 ounces plus 13 ounces water). Set aside.
24 ounces ricotta (or 24 ounces cottage cheese or half and half)
1 ½ cup mozzarella cheese
3 beaten eggs
Onion powder
Garlic powder
¼ - ½ t. Italian seasoning
3 T. sugar

Layer the two mixtures with lasagna noodles (starting and ending with the meat sauce) until all 3 are gone. Makes one 9”x13” pan. Bake at 325 for 1 ½ to 2 hours.

Pizza Dough
Makes 2 extra-large or 3 medium or 4 small pizzas

Scald: (heat 1 ½ minute on high in microwave)
1 ½ c. milk
¼ c. margarine or butter
1 ½ c. lukewarm water (110-115 degrees)
2 T. sugar OR 1 T. honey
1 t. salt
1 T. yeast granules
Stir in:
4-6 c. flour
Add more if needed

Turn out on floured board and knead. Place in bowl, lightly cover top of dough with olive oil, cover bowl with a towel and place in a warm place to rise for at least 30 minutes. Divide dough accordingly and put toppings on. Bake at 425 degrees for 15-20 minutes.

Skillet Lasagna~

1 pound lean ground beef

1 small onion, chopped (1/4 cup)

1 small green bell pepper, chopped (1/2 cup)

1 1/2 cups uncooked mafalda (mini-lasagna noodle) pasta (3 ounces)

1 1/4 cups water

1/4 teaspoon Italian seasoning

1 jar (14 ounces) tomato pasta sauce (any variety) or Marinara sauce

1 jar (4.5 ounces) sliced mushrooms, drained

1/3 cup shredded mozzarella cheese, if desired

1. Cook beef, onion and bell pepper in Dutch oven over medium-high heat about 6 minutes, stirring occasionally, until beef is brown; drain.

2. Stir in remaining ingredients except cheese. Heat to boiling, stirring occasionally; reduce heat to low. Simmer uncovered 10 to 12 minutes or until pasta is tender. Sprinkle with cheese.


Break up lasagna noodles or use pieces that are already broken instead of the mafalda pasta in this savory weeknight favorite.


If you're out of mozzarella but still want a cheesy experience, you can use shredded Parmesan, Asiago or Monterey Jack cheese instead.

one box lasagna noodles

1 jar Classico sauce with italian sausage

1 small can tomato paste

1 lb. hamburg

1 large tub Ricotta

3-4 cups shredded mozzarella

2 cups parmesan

1 egg

2 tbs. italian seasoning

First boil noodles according to package directions. And preheat oven to 425 degrees

1) Brown and drain hamburg

2) mix tomato puree into cooked hamburg

3) add jar of sauce and warm through, then remove from heat

4) in large mixing bowl stir together all ricotta , one cup parmesan , handful of mozzarella , one egg and 1 1/2 tbs. italian seasoning.

Also mix remaining cheeses together in separate bowl for layering.

5) begin layering by placing small amount of sauce in bottom of dish, follow with noodles then ricotta, sauce and mozzarella/parmesan repeat so you end up with three layers like this ending with noodles on top. Add remaining sauce and sprinkle with mozzarella/parmesan and finally a sprinkling of the left over italian seasoning.

6) cover with foil ( not allowing it to touch the cheese) and cook for 40 min.

This recipe is one that I'm always asked to bring to family get togethers so I hope you try and enjoy it.
