I am throwing my mom a 50th suprise Hawaiian themed birthday party and I need some Hawaiian dishes. They can be easy, all the way to hard. The pary is on the 31st of March, can someone please help me before then?

When I was in Hawaii for a visit, I stayed with some locals. This was one of my favorites and very easy. Take several stems of fresh Rosemary. Fresh Pineapple, cut into 1 inch squares. Cut up boneless chicken breasts into bite size pieces. Using the rosemary stem like a skewer, alternate chicken pieces and fresh pineapple pieces. Cook on a charcoal grill until chicken is tender. Delish!

Juice:
Pineapple Juice
Mango Punch
and Apple juice

Mix it all together and you have a great tasting Hawaiian punch.

Coconut Chicken Tenders with dipping sauceS

Ingredients:

1. 2 lbs of chicken tenders

2. 1 1/2 cups of panko bread crumbs (can be found in the Asian aisle of grocery stores)

3. 1 cup of shredded sweetened coconut

4. 1 egg

5. 1/2 can of condensed milk

6. 1/2 cup of orange juice or lime club soda

7. salt and pepper to taste

8. Peanut Oil for frying

Directions: On a cookie sheet, season chicken with salt and pepper on both sides. Set aside. In a medium bowl, mix orange juice, condensed milk, and a beaten egg until your “wet” mixture is well incorporated. In another bowl, mix coconut and panko crumbs. Heat peanut oil in a medium pan or skillet on medium-high heat. Fill pan to about 1/2″ of oil. Dip and fully coat each tender in the egg mixture first and then the panko/coconut mix. Set each coated chicken on a cookie cooling rack. Fry each tender for 6-8 minutes until golden brown. Serve with Honey Marmalade dipping sauce. Enjoy!

Baked variation:

1 cup sweetened flake Coconut

1/2 cup flour

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1 1/2 pound boneless skinless chicken breast halves , cut into 1-inch strips

1 egg , lightly beaten

1/3 cup butter or margarine , melted

Directions: Mix coconut, flour, salt, pepper and garlic powder in medium bowl. Dip chicken strips into egg, then coat with coconut mixture. Place in a shallow baking pan. Drizzle with melted butter. Bake at 400 F for 25 minutes or until chicken is browned and cooked through, turning once.

DIPPING SAUCES

Honey Marmalade Dipping Sauce Recipe:

1/2 cup of honey

1/2 of marmalade (optional: for the adults add a little Dijon mustard to taste)

Directions: In a small bowl, add honey and marmalade. Heat in the microwave for 1 minute. Stir everything until well mixed and serve with coconut chicken tenders.

Maui Wowee Dipping Sauce

• 1 (8 ounce) can crushed pineapple, drained

• 1/2 cup red pepper jelly

• 3 tablespoons whole grain mustard

***Pina Colada Dipping Sauce***

4 ounces Pina Colada Mix

3 ounces Sour Cream

3 ounces Crushed Pineapple (drained)
