We make pizza all the time in our family, we use whatever leftover meat we have had and it always turn out great, and the kids love it also. Here's the recipe for pizza dough that we use-



PIZZA DOUGH

2 1/4 c whole wheat flour

1 tsp salt

1 tsp italian spice ( I also use onion and garlic powder)

1 tbsp honey

1 envelope of quick rise yeast

1 tbsp olive oil

1 c water



Make sure that the water is between 125-130 degrees, add honey and olive oil, then add yeast and let it get foamy, about 10 minutes. Mix together flour and spices, then pour in water mixture. Mix together, knead until elasticky. Put dough into an oiled bowl, cover with a tea towel and let rise...about 1/2 hour or so. Spray pizza pan with Pam or other spray, and roll out dough onto counter covered with a small amount of cornmeal. Roll out to fit pizza pan! When pizza is ready, bake for 30 minutes in 350 degree oven.



We like to use leftover meat, taco meat works well! Chopped meatballs, leftover lunch meat, veggies(mushrooms and tomatoes make it sloppy though), bbq sauce, leftover cooked chicken, different cheeses(brie is yummy!)...every time we make it it's a little different depending on what's in the house. Hope this recipe gives you some ideas, I also use a recipe site on the internet, it's called allrecipes.com and there are tonnes of great ideas all the time!

You can alos use my meatball recipe to make meatloaf. Serve it with either red sauce or gravy and mashed potatoes. The meatballs are really versitile.

1lb Ground turkey

1lb Italian sauage (remove from casing/skin)

2 slices white/wheat bread (u choose)

2 eggs

1/4 onion diced

2 cloves diced garlic

2 tbs worchestershire sauce

1 1/2 tsp seasoned salt

1/2 tbs italian seasoning

1/2 tsp black peper



slightly beat eggs in small bowl and set aside. Tear bread in pieces, drop in food processor and pulse for 30 secconds or less (for best results do not use dried bread crumbs). mix bread and all remaining ingredients (including eggs) in a large mixing bowl using your freshly washed HANDS (how fun!). After thoroughly combining all ingredients, form meat balls in your desired size. Drop small palm sized meatballs in your favorite spaghetti sauce, cover and simmer for about 30 minutes. Bon appetit!

Meatballs may be prepared in several ways: browned in oven, fried on stove top, or my favorite, cooked directly in spaghetti sauce.

Here's a really easy one that can either be assembled and baked or assembled and frozen for later.



Chicken Potato Casserole



10 oz. reduced fat and sodium cream of chicken soup

1 cup sour cream (I use fat free, but it's your choice)

1/4 cup milk

2 cups cubed cooked chicken (or shred a rotisserie chicken from the grocery deli)

1-1/4 cups shredded sharp cheddar cheese

3-1/2 cups frozen hash browns

1-1/2 cups frozen onions/bell peppers combo (or chop your own)

1-1/4 cups shredded sharp cheddar cheese



In a medium bowl, combine soup, sour cream, milk, chicken, and 1-1/4 cups cheese. Spread 3/4 of this mixture in a greased 2-quart baking dish.



Sprinkle hash browns and onion/pepper mixture over the top and press down lightly, then top vegetables with the remaining soup mixture. Sprinkle with remaining cheese.



Now, you can either wrap top with foil and pop it into the freezer, or bake it uncovered in a 350 degree oven for 50-60 minutes or until bubbly. Let it stand for 5-10 minutes before serving.



I usually pull the casserole from the freezer the day before, to thaw somewhat in the fridge before I cook as normal. If you pull from the freezer and pop straight into the oven, allow at least 1-1/2 hours at 375 degrees for cooking.

Fettuccine Alfredo



8 oz. dry fettuccine pasta

1 (8 oz.) pkg cream cheese

3/4 cup grated parmesean cheese

1/2 cup milk

1/2 cup margerine

1 tsp. garlic powder

1/2 tsp. dried basil

1 pinch ground nutmeg



*Optional 4 boneless skinless chicken breasts



What you do:



1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

2. In a medium saucepan, combine cream cheese, parmesean, margerine, mik, garlic powder and basil and stir over low heat until smooth and creamy, 10-15 minutes. Toss sauce with pasta and sprinkle with nutmeg. Serve.



*If using chicken- season chicken to taste, broil in broiler about 6-7 minutes on each side or until chicken is cooked through. Slice chicken into strips, and serve over pasta. YUM!!

Hi Sheri.... Over the years I have found a lot of things you can just "throw" together. Once we started having kids, I knew I would have to find things that worked for everyone. What do you like to eat? I have tons of recipes that I could share.

I like buying a ham because you can get so many uses out of it. You'll need to get one with the bone it and some fat on it. Yes, it can be a little pricey, but when you figure that you can get about three different meals out of it. It's worth it. I put mine in the crock pot on low with a little brown sugar and pineapple juice and by the time I get home from work, it's perfect. I just make some sides and dinner is done. Before I put it in the crock pot, though...I slice off a chunk and freeze it...it's perfect in ham and beans or green beans and then with the leftovers you can make ham salad. Not really a recipe, but hope this helps.
