In Need of a good casserole dish

My mother in law is having a family get together and wants me to make a casserole, but I dont' have any ideas. Please help.

My family likes these two casserols

Enchilada Casserol... ingredients: one big can of Green Chile Sauce for enchiladas, a few Chicken breasts that have been boiled with an onion and shredded, corn tortillas, vegetable oil, packaged shredded mexican blend cheese.

in a small pan pour vegetable oil about 1/4 in thick and heat

in a small pot, warm the enchilada sauce

When oil is heated, place a tortilla in and take out after about 5 seconds. repeat with about 20 tortillas, depending on how big the casserol dish is.

put a little green sauce in bottom of the casserol dish then line tortillas overlapping a little. Layer some chicken and cheese and more sauce. Layer with more tortillas, chicken, cheese and sauce. place the last layer of tortillas, sauce then cheese. Bake for 30 min at 350 degrees F.

Chicken Noodle Casserol....ingredients: a few bone in chicken breasts boiled with onion then shredded, canned veggies or a package of frozen veggies, 2 cans cambells cream of mushroom soup, one package egg noodles that have been boiled and rinsed, 1/2 cup milk, bread crumbs or crushed crakers (I like to use ritz crackers) shredded cheese, salt and pepper.

combine cream of mushroom soup and milk in cassarole dish. Add chicken, veggies, noodles, crushed crackers, and cheese and mix together. Use salt and pepper to taste. Top with more crushed crackers and cheese. Bake at 400 degrees F for 25-30 min or until bubbly.

The chicken noodle casserol is the easiest and I like it more.

Burrito Bake


-1 cup Bisquick

-1/4 cup water

-1 can (16 oz.) refried beans

-1 lb. ground beef; browned & drained

-1 cup thick salsa

-1 1/2 cups shredded cheddar cheese



Pre heat oven to 375. Grease pie plate. Mix Bisquick with water & refried beans. Spread into prepared pie plate. Add in order, ground beef, salsa and cheese. Bake for 30 minutes. Serve with sour cream or fresh tomatoes.

**This was a big hit! The only thing I would add would probably be rice. I think it would taste really good with some spanish rice as one of the layers. :)


Au Gratin Potato & Beef Casserole

-1 box au gratin potatoes

-1 lb. ground beef

-1 12 oz. bag of Frozen Broccoli

-Shredded Cheddar Cheese

-2 cups boiling water

-1 cup milk


Pre Heat oven to 450 degrees. Brown ground beef in skillet until no longer pink; drain. Return beef to skillet and add Broccoli. Cook until Broccoli is cooked, stirring often. Add Au Gratin Potatoes and seasoning mix to 10 in circular pan. Pour boiling water and milk in and mix well. Add beef & broccoli on top of potato mix. Cover and cook 20 to 30 minutes. Remove foil and add a layer of cheddar cheese. Return to oven and cook until cheese is melted.

Take a can of cheese soup, mix it in with hamburger (fried) and put biscuits on top of that. Stick in the oven long enough for the biscuits to cook and you have a very quick and easy dish. You can add potatoes or veggies to it. This makes a quick and easy dish that people enjoy.

I have a cookbook named "One Pot Recipes" I love it. It introduced me to fresh ingredients I never befor thought to use, most of the recipes are very easy to follow, and all are basically casseroles. My family loves the recipes.

Chili Cheeseburger Casserole

If you like Hamburger Helper, you’ll really enjoy this.

1 pound ground beef (eye of round) or Ground Meatless or ground turkey breast

1 (15-ounce) can 99% fat-free chili

1 cup hot water

1 (7 1/4-ounce) box macaroni and cheese

1/2 cup chopped frozen or fresh onion

• Spray a large nonstick skillet with nonfat cooking spray.

• Combine the ground beef, chili, water, macaroni and cheese, and onion in the prepared skillet over high heat.

• Bring the mixture to a boil, stirring frequently.

• Reduce the heat to a low boil.

• Cover and cook for 8 minutes, stirring occasionally.

• Serve hot.

"Cabbage Roll Casserole"

1 1/2 lbs. Ground Beef

1 can (10 3/4 oz.) Tomato Rice Soup

1 soup can of water

1 onion, diced

1 medium cabbage head, cut up

salt and pepper

--Brown beef and onion in skillet, drain

--season with salt and pepper

--Put a layer of beef into a cooking-sprayed casserole dish. Add a layer of cabbage. Repeat until all beef and cabbage is used.

--Pour soup and can of water over all. Cover.

--Bake at 325 degrees for 1 1/2 hrs. or until cabbage is tender.

"Easy Ravioli Bake"

1 jar of tomato pasta sauce (26-28 oz.)

1 pkg. (25-27 1/2 oz.) frozen cheese-filled ravioli

2 cups shredded mozzarella cheese

2 Tbsp. grated Parmesean cheese

--Heat oven to 350 degrees. Spray 13x9x2 in. rectangle baking dish with cooking spray.

--Spread 3/4 cup of pasta sauce in baking dish. Arrange half of the frozen ravioli in single layer over sauce. Top with half of the remaining pasta sauce and 1 cup of the mozzarella cheese. Repeat layers once, starting with ravioli. Sprinkle with Parm. cheese.

--Cover with foil and bake 40 minutes. Remove foil, bake uncovered 15-20 minutes longer or until bubbly and hot in center. Let stand 10 minutes before eating.

--You can also use meat-filled ravioli instead of cheese-filled or browned ground beef in the layers. Sliced mushrooms, spinach, or pepperoni too!

3 Soup Hotdish

Noodles (any type)

1 can cream of mushroom soup

1 can cream of chicken soup

1 can tomato soup

1 lb of hamburger

shredded cheese

Brown hamburger. Cook noodles. Mix all ingredients together and sprinkle with cheese. Bake 350 degrees for 20-30 minutes or until cheese is golden brown.

I have also put in the crockpot to take to potlucks.

Taco Casserole

Its easy!

Brown hamburger meat, add a packet of taco seasoning, and a can of ranch style beans. Then spray a casserole dish (I use a lasagna style pan thats deep) w/ non stick spray, layer tortilla chips sprinkled w/ shredded cheese, taco meat, repeating this until pan is full. Bake @ 350 until cheese is melted.
Top w/ sour cream, lettuce, tomatoes and more cheese.

Broccoli Chhese Casserole....Frozen Broc Spears, Velveeta Cheese Ritz Crackers milk and butter..

Boil the Broccoli, cut the chhese into small cubes Put the cooked Broccoli in a baking dish, add cheese all around it everywhere, pour in the milk til it covers the bottom of the pan, then take 2 sleeves of ritz, crush them up mix with some melted butter, enough so its moist, bake in the over 375 until the cheese is melted...Hope this helps!!!

My family loves when i make this casserole...

Doritos Casserole

1 regular bag Doritos chips 2 10oz cans diced tomatoes &green chilies
2 cans cream of mushroom 1 8oz bag shredded cheese
2 cans cream of chicken 2 lbs ground hamburger meat
2 15oz cans ranch style beans

Brown the hamburger meat, drain. Crush half the bag of chips in a large bowl. Empty all the cans in the bowl with the chips, hamburger meat and pour half the bag of cheese in the bowl also. Pour it all in a casserole dish. Bake at 350 degrees for 20 minutes or until its all hot. Then put the rest of the cheese on top and cook about 5 minutes or till its all melted.

its a very good dish...sometimes i add diced up jalapenos to it...just depends if you want some heat to it

Not really a casserole, but made like one.

Chicken Spaghetti

Chicken Breasts ( as many as you would like)

2-4 lbs Spaghetti

3-4 jars of Spaghetti Sauce (I find Garden Combo is the best)

2-3 lbs of Grated Colby Jack Cheese

Black Olives (optional)

Green Onions (optional)

Bake Chicken Breast until done. Cube

Make Spaghetti according to package

Drain Spaghetti, Mix in Jars of Sauce, Cubed Chicken & Transfer to a large baking dish. Top with Cheese (or can layer cheese into mixture)

Bake for 15-20 min's on 350F (until cheese is melted, starting to brown & everything is cooked together)

Top with Black Olives & Green Onions..Serve with Parmesan Cheese

This recipe yields 10-12 1 cup servings. More or less can be added depending on amount needed.
