Inexpensive meal ideas

Hi - I am looking for inexpensive meal ideas for a family of three. Does anyone have any suggestions? thank you.

I make a lot of meals from scratch like lasagne and shepherds pie. They are quick to do and far more tasty than in the shop and you can make them to your taste and size. For the lasagne buy some minced beef a bottle of cheap bolognaise sauce, some dried lasagne sheets. Fry off the mince with a little diced onion add the sauce, layer in a dish with the lasagne sheets allow to cool and then use your left over cheese and make a simple cheese sauce pour over the top and bake for half an hour medium heat. This can also be frozen at this stage.

Shepherds pie is minced beef with a tin of baked beans in or you could add left over vegetables and gravy. Cook the beef with a little onion and some dried herbs add the vegetables set aside. Boil some potatoes and mash with some margarine, place on the top of the meat, sprinkle some cheese on the top and brown in the oven for 25 minutes. Yummy.

Tuna pasta is also a family favourite and easy to make in 20 minutes. Cook any sort of pasta and whilst that is cooking fry an onion add two small tins of tuna some peas and sweet corn, half a pint of sour cream and a tin of chicken soup. It looks horrid but stick with it! Add the pasta and serve, you can eat it like this or sprinkle with cheese and bake in the oven for 20 minutes.

I have this great chicken meatball recipe which is 500g chicken mince, one onion, 1/4 cup breadcrumb,egg, and what ever herbs you want to put in( I use garlic,chives,parsley) the actual recipe says you can get 8-12 meatballs but first time I made it I got 25! Just roll into size you want and brown off in pan of oil til sealed and golden. I make a napolian sauce of two tins of tomato soup,one tin diced tomato, one onion, garlic, tomato paste, thyme. Brown off onions & garlic then add everything else and simmer uncovered for half an hour. Add meatballs and let simmer for at least 15min make whatever pasta you want to go with it and serve! Its a great meal in taste, cheap to make and very filling. I usually get 6 very large adult serves out of one pot so great to make and freeze for nights dont feel like cooking!

My favorite is Chicken Salsa and it's quick and easy. Cut chick breast up into bit size. Saute till cooked. Pour a jar of salsa over chicken, heat till hot, then sprinkle shredded cheese, " I like the mix Mexican",turn off stove, and cover till cheese melts and spoon over rice.

I try to make at least one meatless meal a week which equals a healthier lifestyle and is much cheaper to cook for the family as well. Vegetarian meals include Chili beans, stir fry veggies with rice, curry, bean or cheese enchiladas, potatoe tacos, grilled veggies with rice or mashed potatoes, homemade pizza, minestroni soup, and stews. If you make the meals spicy or add extra flavors such as smoked cheese or fresh herbs, you wont even miss the meat.

Sausages and potato bake. sausages and salad. lasagne is pretty cheap to make. :) Spaghetti bolognaise, meat balls, rissoles and vegetables

you can add meat to the stew or the pasta, we buy a can of corned beef for the stew and a large bag mince beef ( the minced beef comes in 750grams, we use around 250grams out of that

me n hubby have pasta nights as well as stew nights
we buy a large bag potatoes and a large bag pasta (we on a budgt too)
fill 4 cups with pasta, add 8 cups water (more if its not covred), while that is cooking, chop some onions finely, chop some tomatoes, finely or have a can of tomatoes, add some mixed herbs, 1 oxo cube (red one), place in a pan and start cooking, keep stirring, put on a low heat and reduce down, it should now turn a real dark red.

when the pasta is ready your tomato sauce will be ready. around £2.50 you have spent for a nice meal. enjoy xx
stew....potatoes x 4, onion x 1, carrots x 4, 1 half turnip/swede, 1 oxo red cube, water, chop all the ingredients, place in a pan of water (just cover the ingredients) and add the oxo cube. cook for 2 hours on low heat costs around £3.50 and if you make too much refrigerate till tomorrow (2 meals for price of one feeds around 6 people xxx

Honestly get a turkey. We recently got a 20lber for $15. We roast it up for one meal, then can make about 6-7 other meals from it, sometimes more.
