Lemon Cordial

2 kg sugar
1 tsp citric acid
1 tsp tartaric acid
1 tbsp epsom salts
5 cups boiling water
juice of 6 lemons
rind of 3 lemons

1 Mix dry ingredients (including lemon rind) in a bowl.
2 Add boiling water and juice, and stir until the sugar is completely dissolved.

This recipe makes heaps. I usually reduce in a large saucepan with any other flavourings (such as mint, ginger, lime, vanilla, etc) to make about 1 - 1.5 litres.
I have also reduced the sugar quantity to 1.5kg without any detrimental effect on the end result.Sou
