Macaroni Salad

You can double or half the recipe easy too.

1LB of uncooked macaroni (I use seashell or spiral)

1large green papper

4 carrots (shredded)

1 Onion finely chopped

1 can Eagle brand condensed milk

1 C white vinegar

1 C sugar

2 C mayonnaise ( not miracle whip)

1 tsp salt 1/2 tsp pepper

Cook your macaroni, rinse , drain, and cool

Add your vegatables and mix well.

Combine condensed milk, vinegar, sugar, and mayonnaise,

salt snd pepper in another bowl.

Mix dressing and macaroni.

Chill for 4 hours. It will look like too much dressing but the longer it chills

the more the macaroni will soak up the dressing. Will keep for a week refrigerated!

Cucumber salald

2 cucumbers, peeled and cut into small chunks

1/2 cup sour cream

2 tsp cider vinegar

2 tsp sugar

1 tsp dill

salt & pepper

Mix all ingredients together in bowl and then chill. Serve cold.

Easy Salad

2 C. Cottage Cheese

1 small (4oz.) pkg orange jello

1 can madarin oranges (drained)

2 C. Cool whip(thawed)

You can use fruit cocktail or any other flavor jello if

you don't like orange. I use oranges in stawberry jello.

This mixes in 5 minutes and is ready to eat.

Hope this helps. Enjoy!

spinach leaves, blueberries(or other berry, I've tried strawberries, grapes, raspberries), and chicken breast or chicken nuggets. If you mush a few berries, maybe add a little black pepper- there's your dressing- even my kids eat it :)

My Uncle makes a fruit salad. Large dice strawberries, bananas, sliced cucumber. Put together in a bowl and squeeze frsh lime juice and sprinkle some Mexican spice mixture made for eating with fruit. There is both a dry mixture and a sauce you can shake on it. You can add avocado chunks, if you like. Maybe even some hard-boiled egg slices.

ive figured out in a pinch when you have all the great ingredients for a great salad and then look in the frig and find out u have no dressing and then think okay oil and vinegar..nope don't have vinegar either....i used my sweet pickle juice...i had only 2 pickles left so i just took them out and added some olive oil and viola! salad dressing... it tasted similar to french and i know it was definatly less fatty... im pretty sure the same concept would work with dill pickle juice too...
