low carb lasagna

I never thought I could love noodle-less lasagna but....try this and you'll love it too!!

1 pound lean ground turkey
1 pkg sweet or hot Italian sausage links, skins removed
spaghetti sauce (your favorite brand), 32 oz
regular or low fat ricotta cheese, 8 oz
2 eggs
Italian seasoning, to taste, about 1tsp more or less
mozzarella cheese, 8 oz
Parmesan cheese, 1/2 cup
Optional: mushrooms, cut into fourth's or zucchini, thinly sliced

Brown ground turkey and sausage, breaking into crumbles as you cook. Add your spaghetti sauce and set aside.

Mix eggs, Italian seasoning, and ricotta cheese. Set aside.

In a 9 by 13 pan, add half of your meat sauce. Top with ricotta cheese mixture. Sprinkle with half of your mozzarella and half of your Parmesan. Add your veggies at this time if you choose to use them!

Repeat layers again. Bake at 350 degrees for about half an hour or until bubbly.
