Does anybody do "meat free mondays" or just have an easy, complete protein vegetarian meal that their child enjoys? How about meat AND gluten free? Just looking for some good recipes :D

Shana: try Quinoa (keen-wah) pilaf:
Cook boxed, pre rinsed Quinoa in low sodium veg. broth according to box directions. While cooking, roast a mix of seasonal veggies coated in a little olive oil, salt and pepper in the oven at 400 for about 20-30 mins. Chop veggies up and then toss with Quinoa and a drizzle of olive oil. Makes a great side or could easily be a main dish...very filling. Also, regular spaghetti with tomato sauce but vegetarian and GF:
a bunch of washed spinach
1 carrot
half a container of mushrooms
red bell pepper
garlic (and any other veggies you have on hand can be added in: zucchini, summer squash, fennel, brocolli, etc)
1 can of tomato sauce
half a can of tomato paste
half a can of veg broth or water
Seasonings like basil, thyme, parsley, oregano, salt and pepper (I do everything by taste so I would say start with a tsp)
Puree veggies in a food processor. Add to a hot pan and cook. Add liquids and seasonings and let simmer together. Meanwhile, cook some Quinoa spaghetti, elbows, rotelle (whichever shape you like) and once done, toss with sauce.

hey :) we try to limit meat to 2 days a wk and have fish 2 days and poultry 2 then veggie 1 day. norm we have cous cous or omlettes or soya bean pouches or even a veggie stir fry, let me know if you want full recipes :)

try some falaffel. It is like a middle eastern veggie burger made mostly from beans. you can get a mix in a box that you just add water to, then form it into patties and pan fry. my baby loves it. we get it freshly made from our local middle eastern food market, not from a box mix, and it is spicy and delicious. you usually wrap it in pita and eat it like a sandwich with salad and yogurt sauce, but a gluten-free tortilla would work just as well. you would have to check the packaging to see if the mix has any wheat products.

Big bowl of Mac and Cheese is always a quick, easy and filling dinner. Add a piece of bread and butter, and you have dinner. Again, nothing for gluten free, but I guess you could use the wheat noodles and wheat bread

Corn Chowder (umm more like Veggie chowder!

1 can curnal corn
1 can cream corn
milk (use heavy cream/ half and half)
1 medium onion
2-3 medium potatoes
salt and peper to taste
dill (optional)
Flour or cornstarch to thicken

(any variation and anything goes!)
ham (cooked)
bacon (cooked)
mild or light flavored fish/shellfish)

Sautee all fresh veggies cut into bite sized pieces in a large dutch oven (or large pot)
add cans off corn .. fill cans up with milk/heavy cream/ half and half and add to pot... stir well
add seasoning to taste (salt, peper, dill )
if doing a balanced meal version with meat now add it
simmer until all veggies are tender and cooked through (and meat heated through if your using it)
Thicken with flour and water or cornstarch and water until desired consistancy.. Ladel into bowls and serve.

as for gluton free .. not sure if this qualifies... make some drop baking powder buscuits as they can be dropped onto a cookie sheet to bake (like cookies almost) and very little mixing.

Thanks ladies! Those sites will help, and I think my little guy loves anything w/ a tortilla, so he'll love the fajitas I'm sure :)

If your child likes fajita's, you could make them with tofu... just cut it up like you would chicken or steak, brown and add the fajita seasoning(or make your own with ground cumin, crushed dried oregano, cayenne pepper or paprika, onion powder and s&p)... then use whole wheat tortilla's (or the gluten free ones you can find in the shops), lots of salad stuff and voila! You can also saute peppers and onions before adding tofu to the pan for extra veggies! (MAKE SURE THE TOFU IS EXTRA FIRM!!!!)

For a quick and easy summer meal, make a bean salad and serve on a green salad...
Chick peas (garbanzo beans)
Kidney beans
Green beans
Red onion thinly sliced

Mix all in a bowl and add teaspoon or table spoon of E.V.O.O. and Balsamic vinegar, mix well.

Green salad: lettuce, spinach etc with cherry toms, cucumber, etc and some gluten free precooked and cooled pasta shapes. Toss in cucumber raita (plain yogurt mixed with mint and finely diced cucumber, only 60 cals per cup)

Plate green salad and add bean mixture on top!

Thanks you two!! The recipes sound really good, I'll have to try them :D

And my son isn't gluten intolerant, just my mom, so any recipe is still appreciated!! I just can't get my son to eat any of my veggie recipes yet. We'll see how these go!

Hi Shana,

This doesn't help your gluten free issue, but it's a great meat free recipe from the Pampered Chef. . .

Zesty Ravioli Skillet

1/3 cup (75 mL) heavy whipping cream

4 cups (1 L) loosely packed fresh baby spinach leaves

6 oz (175 g) provolone cheese, grated

1 tbsp (15 mL) olive oil

1 small jalapeño pepper, seeded

3 garlic cloves, pressed

2 cans (14.5 oz/398 mL each) diced tomatoes with onions, undrained

1/2 tsp (2 mL) salt

1/2 tsp (2 mL) coarsely ground black pepper

1 pkg (24 oz/700 g) small frozen cheese ravioli (about 65)

Halved grape tomatoes (optional)

Measure cream using Easy Read Measuring Cup. Wash spinach in large Stainless Mesh Colander; drain. Grate cheese using Ultimate Mandoline fitted with grating blade. Set aside cream, spinach and cheese.

Add oil to (12-in./30-cm) Skillet; heat over medium-high heat 1-3 minutes or until shimmering. Finely chop jalapeño with Food Chopper. Add jalapeño to Skillet; cook and stir 1 minute or until crisp-tender. Press garlic into Skillet with Garlic Press; cook and stir 15-20 seconds or until fragrant.

Add tomatoes, salt and black pepper to Skillet; cook and stir with Bamboo Spatula 1-2 minutes or until simmering. Add ravioli; stir to coat. Cook, uncovered, 4-5 minutes or until tender. Stir cream into Skillet. Cook, uncovered, 1-2 minutes or until simmering. Sprinkle spinach over ravioli; cook, covered, 1 minute or until spinach starts to wilt.

Remove Skillet from heat. Top with cheese; cover Skillet and let stand 1-2 minutes or until cheese is melted. Garnish with grape tomatoes, if desired.

Hi 0ne of our favorites is vegetarian chili.
Chop & saute in Olive oil:
1 onion, 1 green pepper, 2 stocks celery, 2 carrots until softened. Stir in 2 TBSP chili powder, 2 tsp. cumin, 1 tsp. crushed chili peppers.
Add 1 28 oz can crushed tomatoes and 1/2 cup water. Bring to a simmer. Drain and rinse 1 can of black beans and 1 can of kidney beans and add to the pot. Add 1/2 cup frozen corn. When heated through and veges are tender serve. Can be served over rice, couscous or a baked potatoe. Topped with cheese. Enjoy we don't eat beef in my house so sometimes I use ground chicken or turkey or Yves vege ground beef.
