BBQ Meatloaf

2lbs ground beef or ground turkey

1 bottle BBQ sauce

Bell Peppers

Mushrooms [ optional ]

Shredded Cheese

2 eggs

Cheddar French Fried Onions

Mix ground beef, half bottle of BBQ sauce, eggs, shredded cheese, a cup of crushed French Fried Onions, chopped onions, mushrooms, and bell peppers. Put into a shallow baking dish. Cook at 375 for about an hour. In a separate bowl mix a little honey and BBQ sauce. When Meatloaf is done top it with BBQ sauce/ honey mixture and Cheddar French Fried Onions.

I usually serve it with mashed potatoes, corn on the cob, and biscuits.

Hi Brandy,

In my recipe for meatloaf I use;
500g beef mince
1 cup of mixed vegs (your choice)
1 sml diced onion
1 beef stock cube, broken up
2 Tablespoons tomato sauce/puree
1 clove garlic, diced
1 egg, optional, I use this if the mixture wont hold together
I just mix it all together, wrap it in foil and bake in the oven for about half an hour, I then take it out to uncover the meatloaf and give another 5-10min to brown a little on top

Hope that helps! :)

Hey.... this is my very favorite meatloaf.... I make it with Turkey instead of beef because that is healthier for the family and it makes 6 pounds.... I make it for the night we need it, then I also put some in separate loaf pans in case I need a night off of cooking or if something comes up and Ben has to feed the boys himself.... its very easy girl!!!

* 3 cups chopped onions (I love the purple ones)

* 2 tablespoons good olive oil

* 1/2 teaspoon kosher salt

* 1 teaspoon freshly ground black pepper

* 1 teaspoon fresh thyme

* 1/3 cup Worcestershire sauce

* 3/4 cup chicken stock

* 1 1/2 teaspoons tomato paste

* 6 pounds ground turkey breast

* 1 1/2 cups bread crumbs (I like to use the Parmesan)

* 3 extra-large eggs, beaten

* 3/4 cup ketchup (for the top)

Preheat oven to 325 degrees F.

In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme about 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste. Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a loaf on an ungreased sheet pan or put into individual loaf pans.. Spread the ketchup evenly on top. Bake for 1 1/2 hours or until the internal temperature is 160 degrees F.

You guys will love it and it is sooooo easy!!!!!

Here is Confetti Meatloaf, which has veggies in it, which might be a way to get your family to eat something healthy. It works wonders with my family! Enjoy and Happy Cooking!

1.5 pounds ground beef
a small onion (or I use about 5 ounces frozen)
a carrot or two (Or I use 10-12 baby carrots, put in a chopper)
3/4 corn
3/4 peas
a tablespoon of oil
salt (To taste)
pepper (To taste)
1 egg
3/4 bread crumbs
a tablespoon or 2 ketchup

Saute onions and carrots in oil on the stove until soft. When cooked and cooled off, mix with chopped meat, corn, peas, bread crumbs, salt (I use garlic salt personally), pepper, egg, ketchup and mix together. Form into a meatloaf (9x6) and place into a 13x9 pyrex and bake at 375 for an hour and a quarter. Enjoy!

the last 10 min of baking time you have to add 1/2c brown sugar mixed with 1/2c ketchup poured over the top of the meatloaf. this makes any meatloaf sooo moist && good.

1 tbsp butter
1 clove garlic
1 onion, chopped
1 carrot, peeled and grated
1 zucchinni, grated
100g (approx. 2 cups) mushrooms, sliced
300g beef mince
200g pork mince
1/3 cup tomato sauce
1 tablespoon mayonnaise
1 teaspoon Worcestershire sauce
1 egg
½ cup parmesan cheese, finely grated
¼ cup fresh parsley, chopped
½ cup milk
½ cup breadcrumbs
salt and pepper to taste

Preheat oven to 180°C. Bring a frying pan to low-medium heat, and add the butter. Gently sauté the garlic and onion for 2 minutes, until translucent.

Add the remaining vegetables and continue to sauté until soft, about 5 minutes. Remove from heat and set aside to cool completely.

In a large mixing bowl, using your hands to mix together the cooled vegetables and the remaining ingredients until all mixed together thoroughly. Place the mixture into an ungreased loaf pan and bake for 45 minutes.

After 45 minutes, remove loaf from oven, carefully drain out the juices and turn onto a baking sheet.

Place back into the oven and cook for a further ten minutes until the outside is turning golden.

Serve sliced meatloaf over mashed potatoes.

Kraft has a fantastic recipe group for mini meatloaves-you bake them in a muffin pan and they cook in half the time. They have four different "versions" you can choose from: tex-mex, Italian, Greek, or BBQ. I've made the tex-mex and Italian and my whole family (hubby, 8yo girl, 6 yr old boy and 2 yo boy) all eat them up. Hope this helps! Here's the link:

I mix 1 pound hamburger meat, 1/2 pound of ground sausage, with 1 cup of flour, 1 egg, ketchup and brown sugar. Use as much or little ketchup to match your preference. I also add a little bit of salt and pepper. SUPER EASY!
Also, you can make it in a bread loaf pan, or I just shape mine into mini-loaves and put them on a cookie sheet, cook in about 30 minutes on 350 degree.

what a great idea with the stovetop!!!

My Meatloaf, i make about 3 BIG loaves , and freeze 2
4-5lbs hamburger
6 eggs
1T garlic minced
1/2t pepper
1/2t basil
2 loaves of Whole wheat dry bread toasted,crumbed
3 onions minced
6 sticks celery
1/2c shredded carrots or zuchinni

meatloaf is one of thse things the more seasoning you put in the more you can do with it , personally i like plain old fashioned meatloaf

The easiest I can think of is 1 lb ground beef, 1/2 box stove top (whatever flavor your family likes) 1 egg, and salt/pepper. Mix altogether and split into muffin tin, this makes it cook faster and my kids seem to eat it better since everyone gets a "crispy" piece. Bake at 350 for 20-25 mins or until meat is cooked through. It gives you just enough time to make your sides.

I make mine texmex. I use quick rice, taco seasoning or salsa, eggs, and i use enchilada sauce for the topping for the last 15 mines of cooking. any questions just ask!

Really however you like your hamburgers best will do. I have seen it made with steak sauce, ketchup, onion soup mix, chopped onions in it(not all at once,just trying to give you an idea) But really they all have meat, eggs, and some kind of bread crumbs,crackers, or oats in it. The eggs hold it together.....i have heard the "bread" makes it stay moist...and well what kindda meatloaf would it be with no meat lol but the way i make my meatloaf is a lot like teresea's but i dont use milk i use 2 eggs and i use steak seasoning,garlic salt, and lemon pepper in my meat. And my husbnad likes me to put ketchup on top of the loaf half way threw its baking....anyways good luck! I have made so many kinds but old fasion is more my style :)
