not a great cook. I love to get easy recipes though that my picky daughter will love to eat esp the one w/ vegetables since she's constipated most of the time.

Try making homemade mac and cheese but putting stemmed and mashed carrots, peas and tofu into the cheese sauce.  She will never know and it will taste great.  This will add protein and veggies.

Homemade Mac and Cheese

3 Tbsp. of butter

3 Cups of milk

3 Tbsp. flour

1 tsp. white mustard powder

1 tsp. mustard (yellow)

6 cups shredded cheddar cheese (most kids preffer mild cheddar)

1 Ib. macaroni noodles that have been cooked in boiling water for 4 minutes


In a medium sauce pan on medium heat melt the butter and wisk in the flour.  When that begins to bubble add the mustard and mustard powder.  Whisk and let bubble.  Add milk 1 cup at a time and turn up the heat slightly constantly whisking.  When the mixture begins to thicken add 3 cups of the cheese in handles whisking it until melted between handfuls.  Take off stove and reserve the other three cups.  

Next layer a 9 by 13 inch baking dish that has been sprayed with non-stick.  First layer cheese sauce.  Second layer noodles, third layer cheese.  Continue until you reach the top of the pan and top with cheese.  Bake at 350 for 45 minutes or so or until bubbling and cheese on top is melted and slightly brown.
