Myra's Sweet and Sour Chicken and Fried Rice

boneless, skinless chicken breast (frozen or fresh)

Black and White pepper




3 cups cooked rice

2 packets fried rice seasoning

green onions chopped

peas and carrots (frozen or canned)


soy sauce

sweet and sour sauce

Sweet and Sour Chicken

Sprinkle (white or black) pepper and salt on the chicken (boneless and skiness) and bake according to the directions on the package (if frozen bake at 400 for 50-60 minutes)

When done baking, cut into peices. Put pieces first in the egg and milk mixture and then coat in the flour and black pepper mixture.

Flash fry in oil till a light brown. Take out of oil and place in a pot. When all frying is done, pour sweet and sour sauce (I prefer LaChoy) over fried chicken and stir to coat as evenly as possible.

Fried Rice

Cook 3 cups of fried rice. In a pan (I use a wok) heat oil and saute chopped green onions.

Add cooked rice and toss. Take 1 packet fried rice seasoning (can be found in the same area as the soy sauce in the store) and sprinkle over the rice. Spinkle soy sauce over the seasoning and toss. Reapeat same with second packet of seasoning.

Add peas and carrots (either canned or frozen)

in separate pan. scramble some eggs and then add to rice.
