one of our favs:
8-10 red potatoes cut into small bit size chunks
1/4 oil (i like olive oil best)
1 pk lipton onion soup mix
mix oil with mix & pour over potatoes. stir, getting oil & seasoning to cover the potatoes.
cover the bottom of a cake pan with foil (for easiler clean up). put them in the pan and bake at 425 for 35 minutes. stir about every 8-10 minutes during baking. my picky kids even love them! and it's so easy

One of my favorites is twice baked potatoes. you can put bacon and cheese and sour cream in it. you bake the potatoes then you take them out and scoop out the potatoe mash it in with the cheese and bacon and sour cream put it back into the potatoe put cheese and bacon on top of it and bake it again for about 15-20 mins. It's delish !

home fries done in a frying pan on the stove...cut the potatoes into squares and fry them in butter you can add whatever spices you want...cook them until they are golden brown and don't flip them too much or you will get mashed potatoes in stead of home fries. cook at medium temp.

You could try sweet potato and carrot mash (just boil small pieces of carrots with the sweet potatoes, drain, mash with a little butter no milk as wet enough)
OR smashed potatoes... cut small new potatoes in half and boil until soft, drain and add butter or margerine, a blend of fresh herbs (chives, parsley, etc) and a little milk and "smash" them (don't mash fully leave a bit chunky) and sprinkle with some cheese before serving.

You could roast sweet potatoes, just cut up into chunks and pop in the oven at about 400F for 40 mins or so. They get soft and a little brown and sooo sweet!
Or cut potatoes wafer thin and layer in a dish with sliced onions and or leeks. Pour over some diced chili flavoured tomatoes and bake 400F for 40 mins to an hour (depending on amount). When almost tender (poke with a knife) top with cheese and brown.
You could do the same as above but use a creamy or cheesy sauce instead!

Potato Puffs

2 eggs
1 cup mashed potatoes
1/2 cup flour
1 1/2 tsp baking powder
1/4 tsp salt
oil for deep-fat frying

In a mixing bowl, beat eggs. Add potatoes. Combine flour, baking powder and salt; stir into potato mixture

In a large saucepan or kettle, heat about 1 inch of oil to 375º. Drop mixture by heaping teaspoons, four or five at a time, into hot oil. Fry 2-3 minutes turning once, or until golden brown. Watch closely since they brown quickly.

Drain on paper towels. Serve immediately.

Yield 1 1/2 to 2 dozen

Potatoes and Zucchini

5 potatoes sliced thin

2 zucchini sliced thin

1 large onion sliced thin

1 can cream mushroom soup (mixed with 1/2 can milk)

6-7 slices of american cheese

Layer these ingredients in a shallow baking dish, ending with soup, repeating layers twice.

Bake at 350° for 1 hour, and potatoes are done. You may also add some more cheese to the top before removing from oven.

Fried potatoes. You could use any type of potatoe. I skin about 6 big potatoes. Cut into four long lenghts so you'll get a small triangle shape. Thinly slice them. Salt pepper and chili powder. Dice some onion or peppers if you wish. Heat pan with oil and layer the mixture. flip when golden brown. I personly and more salt and papper through the flip and when they are at a good crisp and brown they are the best. Just like hash browns but much more flavorfull. Great with anything.

Zezty Italian Potatoes. I wash about 6 red potatoes and cut them into quarters leaving the skin on. Layer them in baking dish. Add salt, pepper, chili powder, italian seasoning and a little garlic powder. Then I squirt a little zezty italian dressing over the top. enough to wet the bottom of the dish a little to keep from sticking. Cover with tin foil and pop in the oven at around 350 to 400. Bake for about 20 min then mix the potatoes around a bit to get the potatoes wet with the dressing. Cover and bake till tender with a fork. For younger children you may not want all the seasons I use but the dressing w salt and pepper alone should give them a good taste and not to spicy. When the potatoes are done I cover them with some sprinkle cheese and pop in uncoverd till it melts nice.

I do a potatoes on the grill. Super easy and easy clean up. I take about 6 potatoes, peel and cut up (as small or as big as you like), onions, green peppers and cheese. Put in a tin foil pan that can be put on the grill, cover with tin foil and cook on the grill. Add what ever seasonings and some butter to help it from burning. Cook until potatoes are tender

I make fries baked.. I just cut them up and toss some olive oil, salt and pepper. Sometimes even a little paprika or chili powder. pop that in the oven for 30 minutes at 350F (or longer depending on the size of your fries).
This is also great with yams or sweet potatoes and even healthier.

Hash browns:

grate 1 potato per person
grated onion to taste
salt, pepper and cayenne if you wish.
Mix all together well.
Warm some olive oil in a pan and add the mixture in one even layer. Press it down with a spatula. Flip when brown. Serve hot.

I put sour cream and chives in my mashed potatoes from time to time...
