Here's another---this one is so yummy!

Couscous Salad

1 box flavored couscous (garlic or parmesan), cooked
1 can chick peas
1 red bell pepper, finely chopped
1/2 Vidalia onion, chopped
1 English cucumber, peeled, seeded and finely chopped
1 tomato, chopped
1/4 cup fresh parsley leaves, chopped
1/2 cup crumbled feta cheese
Salt and freshly ground black pepper
1/4 cup olive oil
2-3 limes, juiced

In a large bowl, toss all the ingredients with the olive oil and lime juice, to taste.

Oriental slaw
2 pkg. Ramen noodles (Beef or Oriental or Chicken)..(I use chicken)
1 c. salted sunflower seeds
1 c. toasted slivered almonds.. (I've never toasted mine)
2 bunches chopped green onion
2 pkgs. chopped cole slaw cabbage (I buy Dole cole slaw mix)
Optional: 1 can sliced water chestnuts (I use this for texture, and usually cut them in fourths)
Dressing:
1 c. oil
1/2 c. sugar
1/3 c. vinegar
2 flavor packets from noodles

Crunch noodles in package before opening. Save flavor packets for later. Layer the cabbage, onion, water chestnuts, sunflower seeds, almonds, and noodles. When ready to serve, mix dressing together and pour over salad. Toss and serve.

This makes a very large salad/slaw. I always cut it in half unless I'm planning on a lot of people.

Here are some I just copied from another site I go to:



Light Ramen® Salad

1/2 cup toasted, sliced, or slivered almonds

4 cups shredded cabbage or lettuce for slaw, about 1/2 pound (packages are available in most supermarkets

1 carrot, shredded

3 green onions, white and part of the green, sliced on the diagonal

1 package chicken or beef flavor Top Ramen® (3 ounces)

Dressing:

- 2 tablespoons canola oil

- 2 tablespoons light corn syrup or honey

- 1/4 cup apple juice (any fruit juice or nectar can be used)

- 1/4 cup rice vinegar

- Seasoning packet from the Top Ramen® package (see below).

Preparation:

1. Add all dressing ingredients to a food processor or medium bowl. Pulse or whisk until well-blended.

2. Add the salad ingredients (including the dry Top Ramen® noodles, broken into bite-size pieces) to a salad serving bowl and toss.

3. Drizzle the dressing over the salad and gently toss. Serve!



LAYERED PEA SALAD

1 head lettuce, broken in pieces

1 c. diced celery

1/2 c. chopped onion

2 c. frozen peas, do not cook

4 hard boiled eggs, chopped

2 c. mayo

3 tbs sugar

8 oz. or more shredded cheese - works well with cheddar, swiss or parmesan (to cover the top of salad)

8 oz. crumbled bacon or 1 bottle (3 oz.) of Bacon Bits



Do not toss. Layer ingredients in a large bowl, refrigerate, the longer the better. Keeps well. Toss when ready to serve.





Corn Salad

2-3 cans of corn drained

1-2 cans sliced black olives drained

1-2 cucumbers chopped

1 large or 2 small red onions chopped

green onions...as many as you want

red bell pepper chopped (I sometimes leave this out

bottle ranch dressing

1lb bacon cooked and crumbled



Combine all in a large bowl and serve right away or put in the fridge for later. This is always a big hit when I take it anywhere.





Broccoli Salad:

1 head fresh broccoli, cut into bite size pieces

1/2 cup raisins

1/4 cup red onion, chopped

2 tablespoons white sugar

3 tablespoons white wine vinegar

1 cup mayonnaise

1 cup sunflower seeds

10 slices bacon



Cook and crumble bacon.

In a salad bowl, toss together broccoli, raisins and red onions. In a separate bowl, whisk together the white sugar, vinegar and mayonnaise. Pour over broccoli mixture and toss to coat. Refrigerate for at least 2 hours.

Before serving, sprinkle with sunflower seeds and crumbled bacon. Toss and serve.





Curry Cranberry Chicken Salad

1 cup mayonnaise

2 tablespoons lime juice /lemon will work too

1 1/2 teaspoons curry powder (or more to taste)

4 1/2 cups chopped, cooked chicken

2 chopped apple or granny smith apples

1 cup sweetened dried cranberries (, Craisins)

1 cup thinly sliced celery

1/2 cup chopped pecan

1/4 cup chopped scallion



Combine mayonnaise, lime juice and curry powder in large mixing bowl. Stir in remaining ingredients.



Sante Fe salad

Macaroni cooked, canned corn, canned black beans (drained), chopped red bell pepper, chopped green pepper, chopped onion, chopped celery. Mix together mayonaisse with taco seasoning and add. Salt & pepper to taste.

Can substitue mayo for ranch dressing.



Ranch Corn Salad

16oz. frozen corn, thawed

1 15oz. can black beans, rinsed and drained

6-8 slices bacon, cooked crisp and crumbled

3 green onions, sliced

2 cloves of garlic, minced

1 cup shredded cheddar cheese

1/2-1 cup ranch dressing

1-2 jalepenos, seeded and chopped (optional)

1 4oz. can sliced black olives, drained (optional)



Mix everything together and then add the ranch dressing to your desired consistency. Super eaten right away, but even better if left refrigerated for several hours to let the flavors meld.



RUBY TUESDAY'S PASTA SALAD CLONE

SALAD:

8 ounces macaroni, cooked and drained

8 ounces ham, cubed*, about 2 cups

8 ounces sharp cheddar cheese*, cubed

1 (10-ounce) package frozen peas, cooked and drained



DRESSING:

3/4 cup sour cream

3/4 cup mayonnaise (not salad dressing)

1/4 cup lemon juice

1/2 cup grated parmesan or Romano cheese

2 teaspoons dried tarragon

1/2 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper



In a large bowl combine salad ingredients.



In a smaller bowl, mix dressing ingredients. Pour dressing over macaroni mix and toss to blend well. Cover and refrigerate several hours or overnight.



Remove from refrigerator 30 minutes before serving. (More mayonnaise or sour cream may be needed.)





Mediterranean Orzo Salad

1 lb. orzo pasta

1/4 lemon juice

1/4 cp EVOO

1 pound tomatoes diced

1 seedless cucumber quartered and cut into 1/2 inc pieces

1/3 cp pitted Klamata olives, coarsley chopped

8 oz feta cheese crumbled

salt and freshly ground black pepper to taste



Prepare pasta as diected on box , drain in collander and rinse with cold water.

Set aside.

Meanwhile , in a small whisk together the lemon juice and olive oil. set aside.



In a large bowl combine the tomatoes,cucumbers,olives,feta cheese,and Orzo.Add the drssing and toss well to coat. Season with the salt and pepper.

The easiest I have is this:

Take cubed chicken and bow tie pasta. Put in your favorite veggies, cheese and add italian dressing. You can't mess that up. I just keep adding italian dressing until it is good for me.



Have you every had the asian salad?

1 pkg ramen noodles (Not cooked)

1/2 cup olive oil

1/4 cup vinigar

2 tblsp. sugar

1 bag of cole slaw mix



Mix together the olive oil, vinegar, and sugar and spice packet from the ramen noodles. Add in the bag of cole slaw. Mix together. crush the ramen noodles up and put on top.
