OKONOMOYAKI

finely shredded cabbage
leeks cut finely
deveined prawns chopped
squid cut into strips
spiced mushroom

mix a little of each into a dish, add some pancake batter to make one pancake and one egg
gently mix and cook like a think pancake

serve with sweet soya and fish sauce and mayo

Oh, this brings back memories! I lived in Japan for 2 1/2 years before I was married. Here is the basic Okonomiyaki recipe I learned while I was living there. I also included a version of one of the sauces often used on this yummy dish.



Okonomiyaki



There are various styles of Okomomiyaki in the different regions of Japan. In fact, the name Okonomiyaki means something like “to one’s own liking.” Some refer to this savory dish as a Japanese dinner pancake and some think of it as a Japanese pizza. Either way there is room for a lot of variety and a lot of fun!



1 1/3 cup water

4 eggs

3 cups all-purpose flour

1 tsp salt

1 medium head cabbage, cored and sliced thinly

Dash of mirin

1 tsp salt

¼ cup tonkatsu sauce (or bbq sauce)

Options for mix-in ingredients: bacon, thinly sliced pork, shrimp, chicken, squid, corn, bean sprouts, onion, green onions, even boiled potatoes or hard-boiled eggs, minced pickled ginger, or almost anything you would like!



How to make:

1. in a bowl mix the flour, salt, mirin and eggs to make a batter.

2. Add sliced cabbage and your options of bacon, pork, shrimp, chicken and mix into the batter.

3. Preheat an oiled griddle or frying pan.

4. Pour about ¼ of the batter onto the griddle forming a circle. Cook on first side until firm and bottom is browned, flip and cook other side until down. Do not press down on the cake.

5. Serve topped with mayonnaise, tonkatsu sauce, ketchup, or okonomiyaki sauce.

6. Many people also top with smoked benito flakes called katsuobushi and/or Small flakes of aonori, a dried seaweed. Tonkatsu sauce, okonomiyaki sauce, katsuobusi, aonori, and even okomomiyaki mix are often readily available in oriental markets or Asian sections of large supermarkets.



Here’s a version of Tonkatsu sauce:

1/2 cup Worcestershire sauce

1/4 cup sugar

1/4 cup shoyu (soy sauce)

1/4 cup ketchup

1 Tablespoon smooth French mustard (can use dijon or honey dijon)

1/2 teaspoon ground allspice

In a small saucepan, combine Worcestershire through ketchup. Cook over low heat, stirring, until the mixture is reduced about 20%. Add the mustard and allspice. Cool and serve at room temperature.
