Peanut Butter Brownie Cookies

Makes about 2 dozen – Cook time 10 to 14 minutes


1 package of your favorite boxed brownie mix (I use a smooth mix – no chunks or anything)

1 / 4 cup butter or margarine melted

1 small (4 oz) block of cream cheese softened

1 egg

1 cup powdered sugar

1 cup creamy peanut butter (I use Jiff or Reeses… Natural PB is too stiff for this)

1 tub of your favorite packaged chocolate fudge frosting


1.Heat oven to 350 Degrees

2.In medium bowl, combine brownie mix, melted butter, softened cream cheese,
and egg with a spoon until well blended (about 50 strokes, dough will be sticky)

3..Drop dough by rounded Tablespoonfuls 2 inches apart onto greased cookie sheet (about 24)
(I line my cookie sheets with non-stick foil and its very easy clean up then)

4. In small bowl, gently mix powdered sugar and peanut butter with spoon until mixture forms a ball (I get in there with my hands to really work it together)

5.With hands roll rounded teaspoonfuls of peanut butter mixture into about 24 balls

6.Lightly press 1 peanut butter ball into center of each brownie dough ball

7. Bake at 350 degrees for 10 to 14 minutes or until edges are set

8. Let cool on cookie sheet for 1-2 minutes when done as it will continue to cook for another minute or so once out of oven

9. Transfer cookies to cooling trays for at least another 20 minutes or until they are completely cooled

10. Once cooled, spread thin layer of chocolate frosting over peanut butter portion of each cookie

Enjoy! People will think you went to a gourmet bakery to get these and they are so easy made with stuff that is usually a staple in your cabinets!
