Pierogie Bake

1 Box - Farfelle Pasta (Bow ties)

1 Large - Yellow Onion Chopped

4-5 Large - Potatoes Peeled (I use Potato Spuds since it's easier)

8 oz - Velveeta Cheese Cubed

4 - Sticks of Real Butter

1 c. - milk (for Potato Spuds)

-------------------------------------------------------------------------------------------------------------

* Preheat oven to 350.

* Prepare pasta as directed on box, drain.

* Potato Spuds - prepare as directed on box. I round up to three cups of spuds, followed by other ingredients on box.

* Chop onion and saute in large pan with 1 stick of butter. Add pasta to onion mixture, along with 1 additional stick of butter.

* Mix in large bowl - potatoes, 1 stick of butter, and Velveeta cheese. Blend with mixer until all lumps are gone.

* In 9 x 13 casserole dish, line bottom with a thin layer of pasta-onion-butter mixture. Layer potato mixture on top. Then add remaining pasta-onion-butter mixture to top.

* Melt 1 stick of butter and pour over the top.

* Bake for 35-40 minutes.

Well..I wing it.. but here it goes..

1 box of lasagna noodles

3 sweet onions (vidalia if you can)

3 sticks of butter..I know..it is a once in a while dish for us..= )

Shredded Cheddar Cheese

Potato's I use instant but if you like fresh go for it!

saurkraut

Cook noodles

dice up the 3 onions and cook in the 3 sticks of butter..just till they start to turn soft

I rinse my saurkraut then add it to the onions just before putting together

Cook the potatos

Grease a lasagna pan and put a thin layer of the onion mixture on the bottom, then a layer of noodles, then a layer of potato's , onion mixture, and cheese.. then repeat..How ever thick you want it..as long as it ends with potato's /cheese last..as I said I wing it to taste because grandma never wrote it down..= )

bake at 350 for about an hour and enjoy!!
