Pumpkin roll





3 eggs 2/3 c pumpkin

1 tsp lemon juice

¾ c flour

1 tsp baking powder

½ tsp salt

2 tsp cinnamon

1 tsp ginger

½ tsp nutmeg

¾ c sugar





Filling

1 c powdered sugar

2-3 oz cream cheese at room temp

4 tbsp butter

½ tsp vanilla









Preheat oven to 375 degrees. Beat 3 eggs for 5 min with blender. Do not cut time, this is the key to the roll. Add sugar, pumpkin, and lemon juice. In separate bowl sift together all dry ingredients. Grease and flour a 13x9 baking sheet . Bake for 15 min. sprinkle a kitchen towel with a little powdered sugar or you can use parchment paper. Do not use foil. Flip roll onto towel still hot from oven. I suggest running a spatula under the cake before you flip so none sticks. Roll into jelly roll and let cool. To make filling blend all ingredients with blender until smooth. After roll is cool, gently unroll and add your filling. Roll back up and wrap with clear wrap.
