Help, I need some ideas for quick and easy meals that my kids and husband will eat.

Cheesy Tuna Casserole:



4 cups cooked bowtie pasta

1 can albacore tuna

1 small box frozen peas

1 can cheddar cheese soup



Mix all ingredients together in a square glass pan, crumble potatoe chips (I like sour cream and onion) evenly over the top, then bake at 350 deg. until chips start to turn a golden brown.



Even people who don't particularly like tuna or peas like this one.

Shrimp Stir Fry

1 lb peeled and deviened large shrimp (can use chicken)
1 pkg of frozen oriental or stir fry veggies
crab boil
1/2 cup soy sauce
4 cups cooked rice
salt
optional:
fresh squash and zucchini
fresh bellpepper
water chestnuts

Bring water to a boil. At crab boil and shrimp and bring to boil again. When shrimp are pink turn off and let shrimp sit in water and crab boil until you finish preparing everything else.

Sautee all veggies in olive oil until tender. Drain shrimp and add. Mix in rice and soy sauce.

Don't have a name for this one. My mom made it all the time in the oven. I adapted it for the crock pot.



4-8 eye rounds (depending on # you are feeding, an adult will eat 2)

4-5 potatoes pealed and cut into big chunks (you can leave the peal on if the taste doesn't bother you)

4-5 carrots pealed and cut (or use mini carrots)

an onion diced (add a bellpepper if you like)

1 cup worcheshire sauce

1-2 tbs butter

salt and pepper



Put everything in the crock pot for 6 hours. Crock pot works better for me.



In the oven, layer. Meat 1st, then potatos then carrots then onion then butter and sauce.

45 minutes at 350 degrees

Fish tacos
Tilapia fish 1 pound cubed. 1-box crispy tacos(10 to a box), napa cabbage sliced thinly, lime juice, 1 tsp cumin, 1 Tb lime juice, 1 tsp paprika or cayenne pepper,salt and pepper to taste. (we like our food spicy, so use 1 Tb of the cumin and cayenne pepper)
Saute fish in a little oil or butter with the lime juice, cumin, paprika, salt and pepper
Build your tacos with fish on the bottom, then napa cabbage, then lime juice. Serve with lemonaide. Quick and delicious.

Burrito casserole
1 pkg tortillas corn or wheat, 1 can refried beans, 1 jar salsa, 1/2 c cheddar cheese grated.
Sprinkle a little salsa in bottom of pyrex baking dish 8x8. Mix rest with beans. Spread layer of bean mix onto tortilla and layer them in baking dish. Depending on your dish, you may have to cut the tortillas and fill in the edges with the bean mix. Top with cheese and Bake at 350 degrees x 45 min. Serve with thinly sliced lettuce, chopped tomatoes, avocado, black olives, salsa and sour cream. My boys want this served every week and the neighbor kids ask for it too.

Take 1whole chicken,cut into two half,wash properly,marinate with 2Tbspoon vinegar,salt 2 taste,chinese salt half a tspoon,blackpepper 1 tspoon,soy sauce itspoon,half tspoon red chilli powder.Now heat 1Tbspoon oil in a non-stick pan,put chicken in i&cover it till it tenders.IF you will keep on changing the sides,it will turn golden brown.
serve with mashed potatoes&italian bread.

Italian Chicken



Boneless, skinless chicken breast--top with your favorite sauce (I like Neuman's marinara or vodka sauce) and provalone or mozzarella cheese--Cover and bake at 350 for about 30-40 minutes. Serve with a side of pasta and a salad--or if I have zucchini I love to slice that and add it!

My favorite easy meal is Meatball Subs:

Frozen meatballs
1 jar favorite spaghetti sauce(I use Newman's Own Sockarooni)
provolone cheese(I get the unsmoked kind bc it is mild and my daughter loves it!)
Sub rolls
half an onion thinly sliced

Cook the meatballs according to pkg directions. When they are done dump in your spaghetti sauce. You can toast your sub rolls in the oven if you want. Build your sub.

My daughter is almost 2 and she eats the meatballs cut into fourths and the provolone cheese. This does end up kind of messy sometimes but it is really tasty. I serve this with an easy veggie like cucumbers with ranch.

Pizzaritos: (This is from my aunt Lilit Papadakis) Spread refried beans (I like Annies black beans) on roll of pizza dough. Top with cheese and if you like, sliced black olives and scallions. Fold pizza dough over it and sprinkle cheese on top. Bake according to the pizza directions.

Boil up some egg noodles.
Cook 1 chopped onion for a minute, and then add 1 pound ground beef. When no longer pink, add 1 can diced tomatoes. A minute before serving, add a couple cups frozen peas and cook until peas are just warmed through. Combine beef mixture with noodles. I added some spices, and you can add whatever spices you like. Wicked comfort food.

Chicken and rice - very simple recipe



4 chicken breast

1 Pkg. of Lipton Creamy Chicken Rice

8 oz. sour cream

rice noodles



Preheat oven to 350.

Cut chicken into bite size pieces and boil until done. (not long if they are cut up)

Meanwhile prepare the rice by package directions.

Once done, add chicken to rice mixture. Stir in sour cream. Top with rice noodles and bake 15 minutes (just until bubbly)

That's it!
