Take hamburger meat and make patties place in skillet and cook until almost done. All Potatoes sliced crosswise and can greenbeans. Cover and cook until potatoes are tender. My kids loved this when they were growing up.

rotel chicken
boneless skinless chicken breasts which you can microwave until done 5 to 10 min depending on num of breasts you have. while doing that boil some macaroni noodles. when chicken and noodles are done add cream of chicken or mushroom soup or sour cream. a can of rotel type tomatoes. 2in thick slices of velveeta warm until cheese is melted

crock pot cooking is a big help to those with night schedules. Also prepare a lasgna or casserole in the morning or night before and slide it into the oven to bake when you get home or when he wakes up.

Pasta with Bacon and Mushrooms

Prep Time: 10 Minutes Cook Time: 15 Minutes Difficulty: Easy Servings: 4

Ingredients
2 Tablespoons Olive Oil
3 slices Thin Bacon, Cut Into 1/2-inch Pieces
3 cloves Garlic, Minced
1 package (10 Ounce) White Button Mushrooms, Sliced Thin
1 cup Low Sodium Chicken Broth (OR Dry White Wine)
1 cup Half-and-half
¼ cups Heavy Whipping Cream
3 whole Green Onions, White And Light Green Parts Sliced
¼ cups Flat-leaf Parsley, Minced
½ cups Freshly Grated Parmesan Cheese
Salt To Taste
Freshly Ground Black Pepper, To Taste
1 pound Thin Spaghetti Or Angel Hair Pasta
Extra Parmesan, For Sprinkling

Preparation Instructions

Cook pasta according to package directions.

In a large skillet, heat olive oil over medium-high heat. Add bacon pieces and cook until light brown but not crisp. Remove bacon from pan and set aside. Do not clean pan.

Add mushrooms and garlic to pan. Toss/stir around and cook over medium-high heat for 5 minutes; increase heat to high if needed to help mushrooms begin to turn golden brown.

Pour in chicken broth. Stir, scraping the bottom of the pan to loosen any bits. Cook over medium-high heat for several minutes, or until the liquid is reduced by half.

Reduce heat and pour in half and half and cream. Stir and allow to bubble and thicken for a couple of minutes. Add sliced green onions parsley and bacon, then cook for one more minute. Finally, add Parmesan and stir, allowing cheese to melt and incorporate into the sauce. Turn off heat.

Add cooked pasta to a large bowl. Add half the sauce from the pan. Toss with tongs.

***Add 1/2 cup hot pasta water at this point if the pasta mixture is too thick and gunky. Toss and add more water until it reaches the consistency you need.***

Serve pasta in individual bowls, topping each helping with the rest of the sauce. Sprinkle with extra parsley and extra Parmesan.

Try quesadillas. They are quick and simple or even fajitas. Not sure of his hours or if you work but those are both quick and easy. Another quick and easy recipe: Enchilada Pie
Brown ground beef in skillet, drain
Add 1 chopped onion
Taco Seasoning + Water
Cook these until sauce has thickened.
Layer the meat mixture between tortillas and cheese.
Top with enchilada sauce. Cover and cook for about 5-10 minutes or until cheese is melted.
Garnish with salsa, sour cream ,lettuce or tomato if you choose.

Potatoe soup

My husband hates soup but always ask me to make this

6 potatoes diced (peeling is optional, but if not be sure to clean them)
1/2 to 1 gal vitamin D milk
1 to 2 celery stalks chopped
2 pkgs beacon crisped and crumbled (i use the precooked and just use kitchen shears to but it up)
1 to 2 pkgs idaho flavored instant potatoes

Boil potatoes and celery till soft. Add milk to cover potatoes and stir in beacon. simmer till milk heated through then add instant potatoes to thicken to your likeing. I use 2 packs because my hubby likes it really thick. For the flavor of potatoes i tend to use loaded potatoe but have use all the flavors and it works well with them all

Buy some white meat chicken cans add some sweet relish, mayo, chop half of oinion, green pepper and red pepper just like you make tuna fish. keep in in the fridge serve on bread, toast chips and its even good at parties for appetizers. I make a couple of cans because my husband also works nites it easy and kids love it when they come from school as a snack.

Taco Soup!!! - 1 lb ground beef or turkey cood and drain.. 1 pkg taco seasoning. 1 pkg ranch dressing powder. Add these, but don't drain...1 large can of crushed tomatoes. 1 can rotel. 1 can corn. 1 can ranch style beans. 1 can black beans. Heat and serve with corn chips, shredded cheese, sour cream..etc. This is my kids favorite and it makes alot.

My husband also works at night and crazy hours. I make a lot of crock-pot meals during the week. I put it on in the morning around 6 or 7am and it takes about 6 to 8 hours to cook a full meal. By the time my hubby has to get ready to go its done and he can have a healthy, hot meal. I make pork-chops, soup, chicken, rice, roasts, potatos, & veggies. We also have left overs which is nice for lunch or dinner time the next day. I also will start dinner or prep it earlier in the day if Im not using the crock pot, that way dinner is ready when he needs to eats. I hope this helps.

an easy salad of mixed spring greens w/ raisins, pecans, seedless grapes, tomatoes (be creative)...top w/ lightly seasoned grilled chicken breast and a light vinagrette. for dessert....parfait of honey granola, strawberry yogurt, sliced strawberries/blueberries (layer starting w/granola ending w/berries.

can you do all day crock pot so you can have stews, chilis, even a whole chicken ready?? not sure how you feel about microwave cooking but there are steamer bags for healthier meals. you can prepare meats and seafood.. can steam fresh or frozen veggies...success also has 1 min rice. it's precooked. you only heat it up for 1 min. different flavors

BBQ sandwiches,,,,, you can use whatever you have handy. Chicken, roast, thinky sliced lunch meats. ( my kids love the ham) Heat in a skillet with your favorite BBQ sauce til hot and enjoy!

this may sound not to good but it really is quite tasty. get a can of spam and a pkg of valveeta use a chese grater. grate both the spam and cheese into a bowl. mix together and spread on hamburger bun halve put in broiler for about 5-10 min until lightly golden or to taste if u like crispy cheese. serve with a glass of choc milk

Hamburgers only take a few minutes to cook if your meat is thawed. Serve with salad or potato chips (or potato salad) instead of fries.
Omelettes are extremely versatile. Adding some sharp cheddar or goat cheese with your favorite veggies can make it very tasty.
Grilled cheese is another one I like to experiment with. Add some pesto, cream cheese, goat cheese, apple slices, sundried tomatoes - the list is endless! (You can also add some Parmesan on the buttered side of the bread and grill it along with the rest).
I like to do a lot of cooking in advance. Make a big batch or soup, chili, spaghetti sauce. Cook a whole chicken at the beginning of the week, then use it to make sandwiches, stirfry, chicken pot pie, etc.

1. BLT sandwich.
2. Kielbasa, mushrooms, cabbage, red, yellow, & green peppers, onion, squash, and zucchini. You can cut when you have time into bite size pieces. Take a little butter or olive oil (I prefer olive oil) to bottom of pan. put everything in pan and cook til done. I usually cook on med high and it takes about 10 min or less. Cleaning and cutting veggies and meat takes the longest.
Then I cook noodles (any kind) put a little butter and Parmesan cheese and mix well. We love this meal.
3. Ground turkey or hamburger meat, yellow or white rice, mixed veggies. Cook meat and drain grease. Place meat back into pot and add veggies. Cook rice in separate pot. When rice is done mix everything together.
4. Chicken and rice.
5. French toast or pancakes.
