veggie quesedillas with tofu:






tortillas



salsa-store bought or homeade



shredded low-fat cheese



red or yellow bell peppers



any other veggies



chopped extra-firm tofu-seasoned, I use Mrs Dash Chipotle



tomato



avocado







arrange all veggies except tomatoes and avocacdos, over salsa in tortillas, add seasoned tofu. sprinkle with cheese. Bake in oven or microwave, also pizza oven works great. Top with fresh tomato and avocado, fold over, cut into four sections. Easiest, fastest, meal when you're in a hurry. Kids love it!
