Rapini sauteed in garlic and oil

Clean and remove the bottom course stems (about 1 inch) of 2 bunches of rapini

Rinse thoroughly and drain (just set rapini aside in colander, should be "wet" when placed in skillet)

Add 2TBS of olive oil and 1 chopped clove of garlic to a deep skillet

Add the rapini to the skillet

Top rapini with more olive oil and another chopped garlic clove

Sprinkle red pepper (optional)

Put cover on and simmer on on med-low until desired tenderness or 30 minutes, stirring occasionally.

At first, rapini will look like a lot but will shrink after cooking.
