To anyone available,
I need to know if any of you know anything interesting to make with ground beef. We just had sloppy joes so don't want that again, had hamburgers so don't want those or chilli. Am looking for something that's quick and not too much money and is different than all the other usual recipes. If anyone has anything interesting out there I'd sure appreciate it.
Thanks,
Mary Lord
P.S. need to know a.s.a.p. today

Go faux Chinese. Roll your hamburger into small balls. About 1 Tablespoon each. Pepper & salt them and either fry or broil the meat. Stir fry: (all sliced), 1 large onion, 3 ribs from a stalk of celery, 1/2 of a head of cabbage, 1 med carrot, (sometimes I add mushrooms and/or green peppers, pea pods or broccoli) in a med hot skillet with 2 Tblesp of peanut oil, a dash of hot sauce, and a shake or two of ginger till it reaches the level of doneness you like. Pull it off the heat. Put the meat with the vegies. Take the meat pan & add 2 cups of hot water, 3 Tblesp soy sauce, and boil. When boiling, mix 3 Tblsp corn starch with 1/2 cup cold water and add to boiling mixture. It will thicken some.
Remove from heat. Pour everything together and serve over cooked rice.

Hopping John is a good choice. You can combine ground beef ( or boca crumbles or sausage or anything) with green peas & finely chopped carrots and onion. First brown the meat then add onions till tender, then add carrots till very brightly colored, then the peas, please. Stir often to keep from sticking. Add a little water if it starts to get too dry. Frozen peas are best because they hold their shape and nutrition, but can be added last to thaw and warm in a jiffy. The onions disappear ( happy picky eaters) and the carrots are just tender enough by the time the peas are warm without turning gray. A salad on the side is nice, too, but not necessary because it's a meal in itself. There is enough starch in the peas and carrots to keep you satisfied for quite a while, but no grain to confuse your enzymes and putrefy the meat in your stomach. If you want grains (rice, bread, pasta) have them at a different meal.

Ground Beef and Rice with Cheese

Ingredients
• 2 cups white rice
• 2 cups water
• 2 pounds ground beef
• 6 (10.75 ounce) cans condensed tomato soup
• 1/4 cup and 2 tablespoons chili powder
• 16 slices processed cheese food (such as Velveeta®)
Directions
This recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 4 servings.
1. Bring the rice and water to a boil in a saucepan. Reduce heat to medium-low; cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
2. Preheat an oven to 400 degrees F (200 degrees C). Grease a 1-quart baking dish.
3. While the rice is cooking, heat a large skillet over medium-high heat and stir in the ground beef. Cook and stir until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Stir in the condensed tomato soup and chili powder; cook until heated through.

We make hard tacos with ground beef.

1. Ground the beef, drain oil, return to pan and season. You may use the taco seasoning packet sold at local grocery stores.

2. Purchase some corn tortillas, fry them in a 1/2 c. of oil. Make sure you you fry the tortilla for a couple of seconds, then fold, and fry til crisp. Drain on papertowels.

3. Fill the shells with the ground beef, shredded lettuce, diced tomato, and grated cheddar cheese.

Once you get the hang of this, you'll have them done in no time!

Enjoy!!!!

Here is one that is great from one of my old cookbooks.
Bacon-Wrapped Little Loaves
11/2 pounds of ground beef
1 cup shredded Cheddar cheese (4 ozs)
1 egg
1 small onion chopped (about 1/4 cup)
1/4 cup lemon juice
1/4/ cup green pepper
1/2 cup water
1/2 tsp instant beef bouillon
1 tsp salt
6 slices thin-sliced bacon, cut into halves
Heat oven to 350. Mix all ingredients except bacon. Shape mixture into 6 loaves. Crisscross 2 half-slices bacon on each loaf, tucking ends under loaf. Place loaves on rack in shallow baking pan; bake uncovered 50 minutes (or less, check in lesser time).

My family used to love Barbecups--Cook ground beef with 1/2 an onion (Optional), 1-2 Tbsp. brown sugar, 1 tsp. mustard, 1 small bottle barbecue sauce. Open one can of biscuits and spray muffin tins--10-12 cups. Place one biscuit in each one and then add the beef mixture to fill each biscuit, top with shredded cheese and Bake at 375 for 8-10 minutes. Easy and like pizza so the kids love them.

I also have a good recipe for Beef Stroganoff!
1 lb Ground Beef, Diced Red Onion or Dried Onion Flakes, Salt/Pepper, 2 Cans Cream Mushroom Soup, 1 8oz container Sour Cream, Premium Rice

Brown Ground Beef and Onions in skillet on Med-high. Drain the meat.
While meat is browning, in Med Saucepan, boil water to make the Rice. We normally make either 4 or 6 cups of rice for this recipe.
When meat is ready add the 2 cans of Cream of Mushroom soup and the Sour Cream. Stir all together and let simmer for about 10 min to heat through.
Top over the rice and serve with Green Beans and rolls or bread/butter.
It makes GREAT leftovers too!
Enjoy!

I don't know if this will help but an easy meal for us was: cooking ground beef, adding a can of french style green bean, mushrooms and spaghetti sauce. Thats the only way I would eat the green beans. Something like spaghetti. Depending how much beef u cook will depend on how much green beans u use.

Sweet & Sour Meatballs
1 lb. ground meat
1/2 cup drained pineapple tid-bits (reserve juice)
1 cup (add water to drained pineapple juice to make 1 cup)
1 tbsp cornstarch
1 tbsp vinegar
2 tbso brown sugar
1 tbsp soya sauce
2 tbsp chopped celery
1 tbsp chopped green pepper.
salt and pepper to taste
Method:
In sauce pan , mix pineapple and water mixture with cornstarch, vinegar, brown sugar, and soya sauce. stir mixture constantly until it is thick and clear (not cloudy). remove from heat.
Season ground meat with salt and pepper and form into small meatballs. Brown these in a fry pan or place on baking sheet and brown in the oven. pour off excess fat. At this point the meatballs can be packaged and frozen for later use or used rightaway. The prepared sauce can also be packaged and frozen for later use.I would reheat sauce adding the pineapple pieces to cook them before cooling and freezing.
To finish the dish put meatballs into sauce pan or casserole dish, Add sauce, pineapple tid-bits, green pepper, and celery. cook for 1/2 hour over medium heat stirring frequently to prevent sticking or until green pepper and celery are cooked.

This a Taco casserole that I grew up with, and my kids love it. I don't have an official recipe, as it is basically made to individual taste. Cook about a pound of ground beef, drain, and season with taco seasoning. Separately, cook 3-4 cups of white or brown rice. When rice is ready, stir in a cup of sour cream, a cup of salsa, and a cup of prepared cheese sauce. Spread this in a casserole dish, top with meat mixture and a cup of grated cheese. Crush Doritos (Cool Ranch flavor is good) and sprinkle on top. Bake at 350 until bubbly and cheese is melted.

Here's a great easy recipe from Pampered Chef. . .

Beef Enchilada Casserole

1 lb 95% lean ground beef

1 Tbs Southwestern Seasoning Mix (or taco seasoning mix)

1 can (10 oz) enchilada sauce

¾ cup water

½ cup medium thick and chunky salsa

12 (6-in) yellow corn tortillas

¼ cup snipped fresh cilantro

1 cup shredded Colby/Monterey Jack cheese blend, divided

Sour cream (optional)

Combine beef, seasoning mix and salt in 10-inch Skillet; cook over medium-high heat 8-10 minutes or until beef is no longer pink, breaking beef into crumbles using Mix ‘N Chop. Add enchilada sauce, water and salsa to skillet. Bring to a simmer and remove from heat.

As beef mixture cooks, place tortillas in a stack and cut into 1-in pieces using Pizza Cutter. Snip cilantro using Kitchen Shears.

Arrange half of the tortillas evenly over the bottom of the Deep Dish Baker (or another 9 inch microwavable vessel); top with half of the beef mixture and half of the cheese. Sprinkle 2 tbsp of the cilantro over the cheese. Top with remaining tortillas, beef mixture and cheese. Microwave baker on HIGH 3-5 minutes or until cheese is melted. Garnish with remaining cilantro. Serve with sour cream--if desired.

you can do a quick basic stroganoff with ground beef. i usually use stew meat but ground beef is fine. depending on how many people youre going to feed, you will need 1 lb. ground beef, 1 small onion (diced), 2 cans cream of mushroom soup, 1 can cream of celery soup, 1 small package of fresh mushrooms (sliced), salt & pepper, 1 cup sour cream and 1 package egg noodles. this serves 3-4 people.

saute onions and brown the beef, drain. mix soups and add mushrooms. combine onions and beef with mixed soup. heat mixture on stove on med-high until it starts to bubble, turn heat down to med low heat. cover and let mixture cook (30-45 min) stirring occasionally. 15 minutes before serving, mix sour cream into mixture. taste test mixture and add salt and pepper as necessary. spoon/ladle stroganoff onto your cooked egg noodles and enjoy!
