I do all the cooking in my house but my bf is fromj the Carribean. My daughter is NUTS about rice and peas . I cook plantain and stuff but I have tried to make rice and peas a couple of times and it wasn't the greatest. I was wondering in anyone has a good recipe out there for it or any good rice based dish because my daughter can't get enough rice.

Green Goddess sounds a little off but is so good!

about 1 1/2 cups rice to 3 cups water and a pinch of salt, bring to boil then lower to a simmer. In the meantime, combine in blender: 1 med avocado, 1 c basil leaves, juice of 1 lemon, 3 tbs olive oil and 1/4 c water. (salt & pepper to taste) blend until smooth. When the rice has absorbed all the water, fold in the mixture. Healthy and fresh!

Rice Pizza Crust (good for celiacs as well)

1 2/3 c. minute rice
1 2/3 c water
2- 400 gram mozza cheese
2 large eggs
pizza sauce
spray cooking sheet with non stick spray... combine rice and water and cook in microwave on high for approximately 6 minutes.
when done, add 1 1/2 cups of lightly packed mozza cheese to hot rise and mix well. Beat 2 eggs well and add to rice and cheese mixture. Mix well and spread on cookie sheet evenely. Bake at 450 F for 20 minutes or until crust starts to brown. Remove crust from oven and add your toppings. Bake another 10 minutes.

1 lb. ground pork
1 lb. ground beef
1 large bell pepper
1 medium onion
5-6 cloves garlic, peeled
1-2 fresh, cayenne peppers
1 tsp. salt
1 tsp. red pepper flakes
2 4-6oz cans mushroom steak sauce
3-4 cups cooked rice

The Dressing Mix:

Pan fry the ground meat well until all of the meat is well done. Put bell pepper, onion and garlic into food processor and "nearly" liquify it, then add this to the meat. The pepper/onion/garlic should sizzle as you stir it well into the the meat. When the sizzling fades, add the mushroom steak sauce and a little water and allow the entire dressing mix to simmer for at least a half hour.
Dirty Rice: Cooked rice can be added to this mixure and thoroughly stirred. The more rice you add, the drier and "whiter" the resulting dressing will be. Adding the right amount of rice will result in a dress that is moist with the rice appearing very brown ("dirty").

Cornbread Dressing:

Substitute crumbed cornbread for cooked rice.
Save some for later: Freeze the dressing mix, i.e., before adding rice/cornbread, separately. When needed, defrost the mix by heating it and add the rice or cornbread.

Serves: 4-5

1 medium sized can red kidney beans
1 can coconut milk
2 cups of rice
1 small onion, chopped
1 clove garlic, chopped
1/4 teaspoon dried thyme
1 table spoon oil
1 scotch bonnet pepper (whole, do not chop up)

Drain the liquid from the can of beans into a measuring cup and add the can of coconut milk and enough water to make four cups of liquid. Place liquids in a pot with beans, onions, garlic, thyme and oil, bring to a boil. Add rice and stir for a minute. Reduce heat to Medium-Low. Place scotch bonnet pepper on top of liquid and cover tightly for 30 minutes or until rice is cooked. Remove scotch bonnet pepper before serving.

This recipes can also be made using other peas.

I also use a lot of rice. Since I usually have leftovers I make fried rice as a side dish frequently.
Take leftover cooked rice, any meats and veggies you like diced up small. In a couple of T of evoo quickly saute the veggies. Add meat and rice and 1 beaten egg and a few dashes of soy sauce. Cook until fairly dry. YUM

Another way I used leftover rice is in a breakfast cereal. Simply warm rice with milk. Add sugar and cinnamon to taste. This is a wonderfully healthy and inexpensive breakfast that all of my kids loved.

I am gluten intolerant so I make rice with everything! :o) Here are 2 of our favorite rice side dish recipes:

Almond Wild & Brown Rice

* Approx. 5 1/2 cups chicken broth or stock, divided

* 1 cup golden raisins

* 4 tablespoons butter

* 1 cup uncooked wild rice

* 1 cup uncooked brown rice

* 1 cup slivered almonds

* 2 tbsp dried parsley

* salt & pepper, to taste


1. In a small saucepan, bring 1/2 cup broth to a boil. Remove from the heat; add raisins and set aside (do not drain). In a large saucepan, cook wild rice according to package directions, substituting broth for water.

2. Meanwhile, in another saucepan, make brown rice according to package instructions, substituting broth for water and add 2 tbsp. butter.

3. In a skillet, saute the almonds in 2 tbsp. butter until lightly browned. In a serving bowl, combine the wild rice, brown rice, raisin mixture, almonds, parsley, salt and pepper.

Makes approx. 10 servings.

Mexican Rice

* 1 cup long grain white rice

* 1 tablespoon vegetable oil

* 1 1/2 cups chicken broth

* 1/2 onion, finely chopped

* 1/2 green bell pepper, finely chopped

* 1 fresh jalapeno pepper, chopped (optional)

* 1 tomato, seeded and chopped

* 1 cube chicken bouillon

* salt and pepper to taste

* 1/2 teaspoon ground cumin

* 1/2 cup chopped fresh cilantro

* 1 clove garlic, halved


In a medium sauce pan, cook rice in oil over medium heat for about 3 minutes. Pour in chicken broth, and bring to a boil. Stir in onion, green pepper, jalapeno, and diced tomato. Season with bouillon cube, salt and pepper, cumin, cilantro, and garlic. Bring to a boil, cover, and reduce heat to low. Cook for 20 minutes or until rice is tender and water is absorbed.

Hi Tara, here's quick n tasty meal my 4kids love!
Shortcut claypot chic rice using rice cooker...
1) chop 1whole chic n marinade with lotsa oyster sauce,darksoy,lightsoy,chinese cooking wine or sherry,salt,pepper,sugar n sesame oil overnite in fridge.
2) chop 1-2cloves of garlic,n few slices of ginger.
3) slice 2chinese sausages(available in chinatown,soaked in warm water n remove plastic wrapper)or can use sausages or bacon.
4) wash n drain 2cups of rice or more if u're eatin 4lunch n dinner!
5) heat oil in wok or pan,fry garlic n ginger till golden,add chic together wit marinade in n fry few mins till golden.add rice in n fry few more mins till almost dry.
6) pour all in rice cooker,if u used 2cups rice,add 2cups water(measure accordingly) can add chic powder(stock) or more salt in n press cook as usual.
when done,leave sittin for 15mins more.opt:can mix in chopped spring onions or coriander...enjoy!!
