this Fruit Salsa is always a hit and a great for summer. I don't have actual measurements because I do everything by taste but will give it a try:



1 1/2 C watermelon

1 C pineapple

1/4 C red onion



the above ingredients are to be chopped to preference (fine, chunky, a mix of both)



1 Tbls frozen OJ concentrate

1 Tsp Cajun spice

Cilantro to taste





Here is an actual recipe...knock your socks off!



Black Bean-Tomatillo Salsa



1 C Black Beans (canned)

1 C Diced Tomatillos (seasonal, known as Mexican tomatos)

1/2 C corn (canned)

1 med. diced Poblano pepper

1 Lg. diced Jalepeno

1/4 C chopped Cilantro

1 sm. diced Red Onion

1/2 Tsp. Cumin

3 Tbls. Lime Juice

2 Tbls. Olive Oil

1 Tsp. fresh minced Garlic

1/2 Tsp. Pepper



combine above ingredients in large bowl, refrigerate for 30 minutes and serve.

I usually make fresh salsa once a week in the summer we love it! I cut up 4 green peppers, 8 mild/hot peppers, 1 large red onion, 4-6 tomatoes, 1/2 cup celery, salt to taste and sometimes i add fresh cilantro!! I used to chop all by hand but I recentley purchased @ bed bath and beyond a new chopper called the vidalia onion chopper ( as seen on tv) Love it it does all the work for you so easy to use and clean up!!!! Sometimes i add more or less ingredients according to what we have or like most! So easy and good!! Enjoy!

cilantro, red onion, avocado, tomatoes, white shoepeg corn, salt pepper alittle lime. Dice everything small. Serve with tortilla chips.Taste so good. We usually eat once a week.

Suzie this recipe is so easy...my kids help make it...



chop 4 large tomatoes,chop 2 medium onions,chop up 15-20 jalopenos that come in a jar,add salt and pepper then enjoy...if it is to hot lessen the jalopenos...It is great...hope you enjoy!!! fter mixing all together it is great with any kind of chip...
