Shrimp and Grits

Cook one cup of grits according to directions but use chicken stock/broth rather than water. Add 1 Tbls. chopped chives and 1 cup shredded sharp cheddar.

In a frying pan fry down 1 medium diced onion (Vidalia are the best!), i medium diced green pepper, and one medium diced red or yellow pepper; slice 3-4 green onions and add 3 tsp of minced garlic. (Sometimes I add fresh mushrooms and /or diced celery as well)

When the mixture is mostly cooked down, dice up one link of Turkey Kielbasa sausage and add one pound thawed precooked, shelled shrimp. Cook until sausage is slightly browned and shrimp is tender. Add 1 Tbs. of Old Bay seasoning and a Tbs. of Louisiana hot sauce, a Tbs. of lemon or lime juice, 1 tsp salt, and if you like it really spicy add 1/4 tsp of ground red pepper.

Serve the mixture over the cheesy grits--and enjoy the oohs and aaahs!!!

This feeds a family of six with 4 BIG growing boys.

I LOVE shrimp & grits! If it's on the menu, I always order it. Your recipe sounds divine, so I will have to try it soon.
