Ingredients:

serves 4



4 skinless chicken breasts

5 tablespoons of soy sauce

2 tablespoons of rice wine or dry sherry

1 teaspoon of chilli (adjust according to taste, adding more or less)

1 tablespoon of sesame oil

1 teaspoon cornflour

325g/11oz of egg noodles

2 sticks of celery (optional)

175g/6oz of mushrooms

2 carrots

3oz of frozen green peas (optional)

100g/4oz of mange tout

bunch of spring onions

75g/3oz of ham

4 tablespoons of vegetable oil

75g/3oz of peeled prawns



method:



1. Thinly slice chicken. Mix soy sauce, rice wine, chilli sauce, sesame oil and corn flour together. Stir into chicken, cover and marinate for at least 20 minutes. Put noodles in a bowl of boiling water and leave for 10 minutes. Then drain away the water and leave noodles to one side until needed.



2. Meanwhile trim and diagonally slice the celery, clean and slice the mushrooms, peel the carrots and cut into matchsticks. Halve the mange tout, trim and chop the spring onions and dice the ham.



3. Heat half the vegatable oil in a wok. Sir fry the celery (optional) and mushrooms for 1 minutue, then add the carrots, mange tout and spring onions and stir fry for a further 3 minutes. Then transfer to a plate and keep warm.



4. Heat the remaining oil in the wok. Add the chicken with the marinade and stir fry for 5 minutes. Then add the prawns, ham and cooked vegetables, stir fry for a further 2 minutes (or cook to preference). Add noodles, stir fry for 2-3 minutes, or until hot. Then serve, best eaten from wok to table. Enjoy!!!!!!!!
