spinach/tomato pasta toss - very easy

2 cups penne pasta, uncooked

1/2 lb hot or mild Italian sausage, casing removed (I use 1/2 roll of hot bulk sausage)

1 bag baby spinach leaves

1 can diced tomatoes with basil, garlic and oregano

1 cup shredded mozzarella

1 tablespoon shredded parmesan



Cook pasta per package. Crumble meat into large skillet, cook through and drain. Add spinach and tomatoes, cover and cook until spinach is wilted, stirring occasionally. Remove from heat, keep covered to retain heat. Drain pasta, pour into large serving bowl and add sausage mixture and cheeses. Mix lightly. Very good leftover, flavors tend to blend more with time (I often make it a day ahead and just add the cheese when rewarming)

This sounds very good:)!!! But it doesn't need any kind of sauce/dressing for flavor??
