This is better than Chili. My 9 year old loves it and doesn't realize he's getting his veggies.
1LB lean ground beef or turkey - browned
1 can whole kernel corn
1can kidney beans
1 can navy beans
1 can Rotel
1 can crushed or diced tomatoes.
1 envelope Hidden Valley Ranch dressing mix
3 TBS chili powder
Brown ground beef, place in crockpot. Open all your cans and empty them into the crockpot - do not drain anything. Mix in Ranch seasoning envelope and chili powder. Set your crockpot to cook at low for about 8 hours or medium for 4 hours. Ideally you will know how long and what setting you will need for your crockpot.
Serve with a dollop of sour cream and/or shredded cheddar cheese when dipped into bowls.
A very easy recipe and oh so yummy on those cold cold days!! ENJOY

I love this recipe...I got it from a friend of mine before I saw it on here but it's the same & it's great. I put chicken broth in mine to stretch it out a little and freeze it this way we have it for a couple days & can pop it out when we have a craving. Holly I never thought of the Jiffy corn muffins & will definitly try that when I pull the next container from the freezer but what I have done is served it over tortilla chips in the bottom of the bowl then put the cheese then the soup. My family loves it !!!! Great post !!!

LOL! Crazy, huh? I usually make a double batch and there are only 3 of us here. 2 adults and a 7 year old. I use it for OAMC for those really lazy days when even opening a can is just too much work! It's like chili, better after being refrigerated. BF likes it with Jiffy cornbread.

Rotel is canned tomatoes with green chilis. A little spicy but when cooked all day in the crock pot, it tames them. If this may be too spicy for you, I would suggest using 2 cans of diced tomatoes.

This is a family favorite around here! My 7 year old son loves it too. If I have any leftovers, I like to freeze in bowls for a quick lunch later.
