Does anyone have any really good recipes for a vegetarian meal? We don't eat meat. If anyone has any good recipes for marinara sauce or a good homemade pasta recipe let me know. Thanks in advance! I'm also in a rut for meals for the kids- they are WAY picky and pretty much only eat mac n cheese, chicken nuggets (they just don't like red meat), turkey hot dogs, and lots of fruits and veggies, but not any real "meals". a meal for them might be 3 chicken nuggets, mashed potatoes, corn, green beans and a fruit.

OH, MY GOODNESS.  I have the most amazing recipe for lasagna without a STITCH of animal product in it.  I hesitated to tell my husband it was vegan, because I knew it was going to be delicious and he is the biggest Carnivore on the face of the planet. The secret to the tastiness is the tofu ricotta!



 



SPINACH LASAGNA



1/2 lb lasagna noodles (use whole wheat to make it even healthier!)



2 10 oz packages frozen spinach, thawed and drained



tofu "ricotta" (see recipe below)



4 cups tomato sauce



 



Cook the lasagna noodles according to the package directions.  Drain and set aside. (You can also use the oven-ready kind to save time!)



Preheat the oven to 350 degrees.



Squeeze the spinach as dry as possible and set aside.



Prepare the tofu "ricotta."



Stir in the spinach.



Cover the bottom of a 9x13 inch baking dish with a thin layer of the tomato sauce, then a layer of noodles (using about one-third of the noodles.) Follow with half the tofu filling.  Continue inthe same order, using half of the remaining tomato sauce and noodles and all of the remaining tofu filling.  End with the remaining noodles, covered bu the remaining tomato sauce.



Bake for 25 to 30 minutes.



 



TOFU "RICOTTA"



1 lb soft tofu



1 lb firm tofu



3 cloves garlic or 1/2 tsp garlic powder (or 3 Tbs minced garlic)



2 Tbs extra-virgin olive oil



1/4 cup soy milk (or regular milk if you're not vegan)



1 Tbs sugar



2 Tbs lemon juice



3 tsp minced fresh basil



1 Tbs choppd freh oregano, or 1 tsp dried oregano



3/4 tsp fine sea salt



Combine in food processor and pulse to puree.
