Veggie Recipes!

Hey, I am new to this community, enjoying what I am reading so far. Looking for some ways to incorporate more veggies in our meals. I love veggies, just not always sure of what to do w/ them. I know a million things to do w/ potatoes, but there are so many healthy delicious veggies out there to eat! :) Any veggie recipes anyone could share would be helpful. Thanks so much!

p.s. I am from cajun country, so if there are any recipes that ya'll would like such as gumbo or shrimp etouffee, just let me know. I am glad to share anything I have! :)

Thank you for all the great ideas Karina! I am writing them in my recipe notebook that I started. I especially can't wait to try that last one, baked veggies! Sounds fabulous! I have never even thought of pumpkin or parsnips! I appreciate the help.

hello........all of these recipes are made with fresh vegies except the one thats my husbands favourite......i do my cauliflower with a cheese sauce (homemade) on the top and then bake in the oven.

zucchini....cut chunky slices and steam a little, then throw them into a skillet with some salt and pepper and parmesan cheese.

carrots....boil them and add honey and grushed galic to the water.

green beans....steam them and when tender serve with a sprinkle of lemon juice, olive oil and some toasted flaked almonds on the top.

green cabbage.....saute in butter and add diced bacon and lots of salt and pepper, add a little water to help cook but in the end just prior to serving there should be not alot of water in pan.

peas and carrots...(my hubby's favorite, therefore not low fat) make a roux out of butter and flain flour, add a can of peas and carrots(liquid and all) stirring so liquid thickens, add half cup cream and some pepper.



also my favorite recipe for baked vegies is...

potato,

sweet potato, parsnip,

pumpkin,

carrots,

onions,

cut them up very chunky and make a mixture of the following...

olive oil, honey, garlic, pepper, wholegrain mustard, fresh rosemary and maple syrup (not sure of quantity but depends on amount of vegies)

shake all ingredients together in a jar and pour over vegies and roast in oven....vegies come out roasted but chewy, caramalised and absolutly beautiful flavour.....all my friends request this when i invite them around for dinner...hope you enjoy it too.

Cut up carrots to bite size. Boil them in water until they are tender. Drain majority of water, leave just a tiny bit of water. Then put your eye on low and add some butter, a little brown sugar and maple syrup. Once they look glazed add a pinch of parsley and watch the carrots disapper!
