Tonight I have decided to make pizza casserole.... It's so simply & so yummy!

All you need is::

1- 1 1/2LBS of ground beef
1- jar pizza sauce
1- package of pepperoni
1-package of mozz cheese
about 5 cups of egg noodles.

Brown your ground beef & cook your noodles according to package. Then add in the sauce & pepperoni.. Put n a baking dish & top with the cheese.. 350 for about 20 mins or until cheese is melted good.. Serve & Enjoy!

Stuffed green bell peppers. With Ground beef, bacon, sun dried tomatoes, garlic and onion. Topped with metled chedder cheese! Yummy!

Leftover chicken rice and veg casserole.. I soaked the rice in low sodium chicken stock for a few hours then add some cauli and broccoli florets, low fat cream of chicken soup and top with chicken, cover and bake for an hour. Hubby loves it!

I prefer chicken salad with mixed lettuce leaves, mandarin oranges, peaches and strawberries but hubby likes propper meals!

not sure about tonight, but last night was Taco Tuesday. Baby is too young to eat a taco properly, so he gets more of a taco salad. Brown ground turkey with taco seasoning, warmed taco shells in oven and stuff with turkey meat, cheddar cheese, tomatoes, lettuce, sour cream and avocado! Tapatio for my spicy husband! Also a tip for BBQ chicken. I never liked it BBQ'd because it was always dry, but learned to marinate the chicken in a can of coconut milk, shake off the excess, sprinkle with a season salt rub and it comes out moist and juicy every time!

Tonight we are having chicken Sang Choy Bow. Fry up some chicken mince with ginger, garlic and onion. Add some fish sauce and sweet chilli sauce to taste and finely diced red capsicum. Spoon the chicken mix and steamed rice into lettuce cups to serve. Our kids love these as they get to eat with their hands! They wouldn't normally eat red capsicum but they love it in this. The whole meal takes about 10 minutes to cook. You can also add extra veg like diced mushrooms or bean shoots for some variety and extra veg for the kids.

It was "every man for himself" night....eating up all the leftovers that were accumulating in the fridge. Hubby had a hot dog and a hamburger, Katie had a bologna sandwich, I had a cup of sugar-free pudding and and a glass of iced coffee. Charlie hasn't hit the fridge yet, he must have ate out with his buddies...lol

oh, the kids don;t eat this unfortunately, so they had homemade chicken nuggets. Steam some carrot and cauliflower (or whatever veg you want to sneak into them). When it is soft pass it through a sieve or blend into a puree. Add some water so it is a fairly runny consistency. Dice up some chicken breast. Dip the chicken into flour and shake off the excess, dip it into the carrot puree and press it on to coat it, then finally toss it in seasoned breadcrumbs. Pan fry in vegetable oil. Obviously more effort than out of a packet but so much nicer and it gets some vegetables into my fussy boys!

we are having Thai Chicken Curry pie. Dice some chicken thigh and coat it in flour. Brown it off and then add a sliced onion. When the onion is opaque add a couple of spoons of Thai Green Curry sauce, and cook for a couple of minutes. Add a finely sliced kaffir lime leaf , a diced zucchini and a couple of cups of diced pumpkin. Pour in 2 cups of light coconut milk, 1 tsp of brown sugar and the juice of 1 lime. Let it simmer until the pumpkin is soft. When the mixture is cool, spoon into a pie dish lined with a sheet of puff pastry and put another sheet on top. Cook for about 30 minutes. You can make the filling the night before or even on the weekend and freeze it so it is then a quick and easy week night dinner.

We are having tater tot casserole tonite!!!



1lb of ground hamberger meat

frozen tater tots

1 can of cream of mushroom

1 can of cream of celery

1 pkg of colby finley shredded cheese



In a cake pan of casserole dish put a single layer of tater tots at the bottom cook as directed on the package. cook hamburger meat while tater tots are cooking. After hamburger meat is done and the cream of mushroom and the cream of celery to the hamburger and let it simmer once its cooked and the tater tots are done. Place the meat mixture on top of the tater tots then add a layer of the shredded cheese (it normally takes a whole pkg of cheese) put it back in the oven till the cheese melts and then serve.

Its yummy!!!!!

Ingredients

1 cup(s) sugar
2/3 cup(s) cocoa
2/3 cup(s) flour
1/2 cup(s) boiling water
1 pinch vanilla
1/4 pinch salt
1 pinch baking powder
2 Tablespoon(s) melted butter

Instructions


Boil water with 3 tbsp of sugar and set aside.

Combine all dry ingredients (first 5 ingredients) in a bowl, then add eggs,melted butter and vanilla until well blended, mixture will be thick.

Butter a 9 inch microwavable pan or tupperware, even if its a tad smaller it's ok.

Spread mixture evenly into the buttered pan.

Very slowly pour water into the center of the mixture and do not stir!

Cover well, with plastic wrap or lid.

Cook in microwave on regular power for 5 minutes, check it to make sure it's set and if not put back in microwave for a couple more minutes.

Sprinkle with powdered sugar and serve with your favorite toppings.

Ingredients

DIRECTIONS 1 each Chicken, cut up
1 c Orange Juice

Instructions


Cut up chicken into cubes.

Brown chicken in a pan.

Add orange juice and reduce.

Serve over rice.

sounds yummy...im making vegetable lo mein..just stir fry frozen stir fry veggies in small amt of oil, i usually add an onion and garlic...add soy sauce and serve with cooked wide lo mein noodles..yummmm

aked potatoes (washed and cooked in the microwave, after I punch them with the fork, to make sure they'll cook properly) with butter, cheese and baked potatoes. 10'tops to have it ready! Enjoy.

Adobo Chicke: 1 large container of soy sauce, 1 cup water, 2 cloves garlic, 2 bay leaves, 1 pack family chicken wings (or drumsticks). Put all together in pot and cook on medium heat for 30 minutes or until chicken cooked. Easy and yummy!

We had broiled chicken marinated in a bourbon brown sugar marindae, with rosemary roasted red potatoes and corn on the cob, but since my hubby doesn't like corn I steamed some broccoli for him! And to top off for dessert we had homemade Chocolate-banana ice cream.

Yea its really yummy & of course you can add peppers or what ever other toppings you like to the casserole I am just not big on all that other stuff.
