Just wondering what is everyone's signature summer dish! Right now I'm really into pasta salads and making my own salsa so if anyone has a good recipe to share I would love them! Otherwise I'm interested in what everyone's favorite summer dish is!!!

not really into pasta this summer. However, my family loves "cold casseroles" during the summer. So I let my imagination take over a bit and added small ham chunks and a little grated cheese to potatoe salad and made a hit. The kids make a fresh spinach salad with bacon crumbles and chopped up hard boiled eggs, a little salt and pepper (don't dry the spinach leaves too well because the yellow from the eggs and that little bit of water make a nice dressing.

7 Layer Salad

(I stir/mix it all up because I think it tastes a lot better that way and you get an equal amt. of everything. I got this recipe from a friend @ a playgroup & she mixes it all together too. you can also use more or less of any ingredient..if you really like a particular thing)

1/2 head shredded lettuce
sliced celery, enough to cover lettuce
1/2 green pepper, chopped fine (I use a whole one)
1 pkg frozen peas--thawed/partially cooked, drained & cooled
1/2 pint (1 cup) mayo mixed with 1/2 pint sour cream
1 1/2 tbsp sugar
parm. cheese, sprinkled over
12 strips of bacon, fried crisp & crumbled

Like I said, I stir it all up and it tastes awesome that way :)

Cover & refrigerate. (I'd eat it within about 2-3 days, otherwise the lettuce starts getting a little soggy)

I made this for my grandma and mom when they came out to visit, and they LOVED it!

Love serious salads (not wimpy iceberg/carrot varieties)...I start with dark leafy greens and add grilled peppers and onions, avacado, black beans, rice, lime juice, tortilla chips, salsa or chili...OR dark leafy greens, couscous, olives, lentils, diced and pan fried onions, celery and peppers, fresh tomatoes (love the sweet yellow ones), and hummus or lemon tahini dressing, sometimes I add fallafel too
deserts: fruit salad,fruit pizza and peach biscuits

Fish tacos and lots of salsa and chips, easy and fresh and delicious! And anything on the grill, me and the husband grill almost all year even thought we live in the northwest and the weather is crappy 10 mo out of the year, thank goodness for carports!

Anything on the grill but particularly chicken.
Grilled chicken breasts - coat chicken with soy sauce, olive oil and pepper. Grill till done, turning once. I also grill veggies (zucchini, onions, red peppers, mushrooms etc.) with the same marinade. Soooo easy but oh so good!

I love to make pasta salad. My daughter LOVES it and she is my toughest critic. Instead of using Italian dressing though I use Krafts Sundried Tomato Vinigarette SOOO good :)

Fruit salad is a favorite in my house. A nice healthy sweet twist for hot summer afternoon.
4 pkgs. no sugar added jello
8 oz container Cool Whip (nonfat work just fine, or even make your own whippped cream)
1 pint cottage cheese (small curd, nonfat is perfect)
2 cans or frozen mixed fruit.

Make the jello the way you normally would for jigglers. Refridgerate for about an hour then mix in cool whip. Return to refridgerator for an additional 30 minutes, then add in cottage cheese and fruit. Refrigerate until firm. Eat and enjoy.

"Make sure you completely drain and pat dry the fruit before adding it to the jello mix."

Don't just love all the fresh options of summer grocery shopping. I love grilling veggies (mushrooms, squash, tomatoes, onion, peppers) and serve them on a roll for dinner one night, then tossed with a pasta another night.

Pampered Chef also came out with this new salsa recipe. It's been a huge hit!!
Mango Confetti Salsa
1 large mango
½ small jicama
1/3 orange bell pepper
1/3 red bell pepper
1 jalapeno pepper, stemmed
1/3 small red onion
1 tbsp fresh lime juice
¼ tsp salt
½ tsp Chili Lime Rub

On Large Grooved Cutting Board, cut mango using Mango Wedger. Remove skin using Avocado Peeler. Peel jicama using Serrated Peeler. Dice mango, jicama and bell peppers into 1-inch pieces using Chef’s Knife. Cut jalapeno in half; remove seeds using Core & More.

Combine mango, jicama, bell peppers, jalapeno and onion in Manual Food Processor; cover and pump handle until coarsely chopped. Add lime juice and salt; pump handle to chop to desired consistency, removing lid and scraping down sides of bowl as necessary using Mini Mix ‘N Scraper. Pour into serving bowl and sprinkle with Chili Lime Rub. Serve with tortilla chips.

Love, love Spinach salad...baby spinach, any fruit - we usually use cut up strawberries and mandarin oranges, chopped walnuts and poppyseed dressing...YUM!!
