Hearty Whole Wheat Bread

2 tbsp. yeast
2 cups of Warm Water
1/2 cup of sugar
1/2 tsp of salt
2 tbsp of butter softened to room temp.
1/2 cup of Lactaid
1/4 cup of Flax Seeds
3 cups of Bread Flour
3 cups of Whole Wheat Flour

Using a mixer with a dough hook or a large bowl and knead by hand. Makes two loaves.

1. Dissolve sugar in warm water. Add the yeast. Allow to proof until yeast is a creamy foam.

2.Mix in salt, butter, milk, and flax seed.

3. Mix in the flours, one cup at a time, alternating the bread flour and whole wheat flour. Knead dough in mixer or on a slightly floured surface until smooth.

4.Place in a well oiled bowl turning to coat. Or if using mixer, spray with a spray oil and turn to coat in the bowl. Cover with a damp cloth and allow to rise until doubled in size, about 1 hour.

5. Punch down dough. Knead for a few minutes, and divide in half. Shape into loaves and place into well oiled 9X5 inch loaf pans. Allow to rise for 30 minutes, or until the dough has risen about an inch above pans

6. Bake at 350 degrees for 30 minutes until bread has a nice golden color and sounds hollow when you tap it.
