Lets trade healthy recipes :D

I LOVE Vietnamese fresh spring rolls which are super healthy and filling !

Ingredients

* 2 ounces rice vermicelli
* 8 rice wrappers (8.5 inch diameter)
* 8 large cooked shrimp - peeled, deveined and cut in half
* 1 1/3 tablespoons chopped fresh Thai basil
* 3 tablespoons chopped fresh mint leaves
* 3 tablespoons chopped fresh cilantro
* 2 leaves lettuce, chopped
*
* 4 teaspoons fish sauce
* 1/4 cup water
* 2 tablespoons fresh lime juice
* 1 clove garlic, minced
* 2 tablespoons white sugar
* 1/2 teaspoon garlic chili sauce
*
* 3 tablespoons hoisin sauce
* 1 teaspoon finely chopped peanuts

Directions

1. Bring a medium saucepan of water to boil. Boil rice vermicelli 3 to 5 minutes, or until al dente, and drain.
2. Fill a large bowl with warm water. Dip one wrapper into the hot water for 1 second to soften. Lay wrapper flat. In a row across the center, place 2 shrimp halves, a handful of vermicelli, basil, mint, cilantro and lettuce, leaving about 2 inches uncovered on each side. Fold uncovered sides inward, then tightly roll the wrapper, beginning at the end with the lettuce. Repeat with remaining ingredients.
3. In a small bowl, mix the fish sauce, water, lime juice, garlic, sugar and chili sauce.
4. In another small bowl, mix the hoisin sauce and peanuts.
5. Serve rolled spring rolls with the fish sauce and hoisin sauce mixtures.

jsut made kale chips. OMG SO GOOD. there are recipes but I didn't follow one just remembered that the kale had to be really dry. so tear the leaves off (toss the 'rib') and salad spina fter washing. pour bit olive oil and sea salt (have read ppl season with garlic or whatever) and bake single layer (not touching sorta). I did 325 degrees. flipped voer once (some, too lazy to do all). can't remeber how ong cause not paying att'n but maybe 10 min or so. can't let burn or get too dry. yum.

I would probably use something like chicken tenders so I could deal with the chicken as little as possible.

found a garlic chicken crockpot recipe. don't hae to crush cloves or even take off skin I believe. so few ingred and chicken can be whole. anyone want it? marina super easy way for you to make a chicken for your fam as long as your hubby does the take out of pot for you.

only thing s I'd eat next day to be able to take as much of the fat off as possible if you don't want to handle the chicken and try and take the skin off yourself. a butcher can do that for you though. but do leave some on as even if you don't eat the fat you want the moistue.

anyway, good, easy, flavourful.

WOW! That sounds awesome! I will have to try it when I am all done with my strict ass diet...I will type a good healthy one this afternoon.
