I'm looking for a good GF receipe for cut out cookies - anyone got one?

Thank you everyone - I will try making them this christmas. Although, since I posted this question, we had Thanksgiving. We made GF turkey, pumpkin pie, apple pie, lemon merangue pie and cheesecake and guess what??? He wouldn't eat any of them!!! We did though :)

I finally nailed the puffy cut outs I was used to before. I have struggled to try and make a good cut out with my kids. I used corn flour (masa). They taste amazing and are big
and fluffy cookies.

I have used the Bob's Red Mill all purpose flour for numerous recipes and I think it works great...some things you can't even tell the difference!! I would give that a try. I know some people that make their own flour mix, but for my busy life style the premixed stuff is easier for me.

I make ALL my old recipes with this flour mix I created, and they taste very close to the same as before. I take my baking to pot lucks and family gatherings, and NO ONE has ever noticed the difference. I make pie crust and cakes and cookies. Fruit based cakes work the best and aren't so heavy. (banana, apple, carrot etc) Chill all cookies before baking so they don't fall apart after baking.

GF Flour mix (use 1 for 1 in any recipe for wheat flour)

2 1/2 cups rice flour (I use brown)
1 cup Arrowroot flour
1 cup Tapioca flour
1/4 cup cornstarch
1/4 cup potato FLOUR
1 Tablespoon Xanthum gum

mix well and store in an air tight container

The Bob's red mill alpurpose GF baking flour says you can substitute it for readl flour in any recipe and then has a chart for how much Xanthan Gum to add. haven't tried it yet but that is what I plan on doing when we make cookies in a couple of weeks.
