• This no knead spelt bread is packed with flavor and nutrients. A great staple for family dinners or parties that will wow the table. This bread is something you make over night. The bulk fermentation takes 12-18 hours to rise so we simply mix before bed, let it rise over night and finish it off the next morning, or you could mix before work and have fresh delicious bread by dinner time. Nothing says "Home" like fresh bread from scratch. Great to do with kids!


  • 2 Cups Unbleached, Unbromated Bread Flour (All Purpose is fine but has less protein. I recommend King Arthur)
  • 1 Cup Whole Spelt Flour (Whole Wheat will work just as well but will yield a different flavor.)
  • 1/4 tsp Instant Yeast (I recommend Lesaffre SAF-Instant Red Dry Yeast. )
  • 1 Tbsp Flax Seed Meal
  • 1 1/2 Cups Warm Spring Water
  • 1 1/2 tsp Sea Salt

  1. Pour your warm water into bowl, we use a clear bowl.
  2. Add Yeast, to ensure it is incorporated thoroughly
  3. Add Flours
  4. Add Flax Seed Meal
  5. Mix for a minute then Add Salt
  6. Once mixed Cover bowl with Plastic Wrap or tight fitting lid
  7. Let it rise for 12-18 hours.............................
  8. Flour a large surface and scoop dough out onto the surface
  9. Gently stretch out with hands to release a few large air bubbles
  10. Gently Fold Front to back then side to side
  11. Flip over so the seam is on the bottom
  12. Line your bowl with plastic wrap and lightly oil it with Olive Oil
  13. Place dough back into bowl and cover with a cloth towel for 1 hour
  14. Preheat your oven to 500 degrees with your dutch oven with lid inside.
  15. Once bread has doubled in size
  16. Quickly remove dutch oven and place bread seam side down into dutch oven put lid on and back into the oven
  17. Bake with the lid on for 30 min
  18. Then remove lid reduce heat to 450 and bake for another 10 min
  19. Then allow bread to cool for as long as you can keep your hands off of it, but it will look and smell delicious, try to give it at least 15 minutes though. :)
