  • 1 T. cornstarch
  • 4 c. raspberries
  • 16 oz. low fat cream cheese softened
  • 1 c. powdered sugar
  • 1/4 c. coffee liquor or strong coffee
  • 1/2 c. sour cream
  • 6 oz. soft ladyfingers
  • 2 T. unsweetened cocoa powder
  • Mint and raspberries for garnish

  1. In medium sized saucepan, mix sugar and cornstarch until blended.
  2. Stir in 3 cups of the raspberries.
  3. Bring to a boil over medium high heat.
  4. Boil 2 minutes or until thickened.
  5. Cool to room temp.
  6. Add remaining 1 cup berries.
  7. In large bowl, beat with electric mixer; cream cheese, powdered sugar and liquor until smooth.
  8. Stir in sour cream.
  9. Separate and arrange half the ladyfingers on bottom of 9 inch square glass baking dish, overlapping slightly.
  10. Spoon half of the raspberries.
  11. Mixture on top, then half of the cream cheese mixture.
  12. Sift half of the cocoa powder on top.
  13. Repeat layering ending with cocoa powder.
  14. Cover with plastic wrap.
  15. Refrigerate at least 4 hours or overnight.
  16. Garnish with mint and berries, if desired.
