My 1yr old daughter loves to eat. she eats anything also. not picky at all. I dont like giving her baby food all the time which there isn't a lot to choose from. what is easy to cook (she doesn't like to wait) and is well balanced?? (a meat, dairy, grain, etc) Is there anything I can also cook a lot of and maybe store for later also??

I have a 1yr old son and i like to make him small dishes such as mac n cheese (with a little bit of chopped up sandwich meat), mashed potatos (with boiled and cut up green beans) or campbells chicken noodle soup (with crunched up saltine crakers soaked in the broth). He's like its and they're easy meals to make....Just a few lil ideas for you. Good Luck with your daughter =)

Something else I've made my son, that's fast is a Quesadilla. I use a fat free tortilla, either shreaded mozzarella w/thinly sliced zucchini, a little oregano and maybe some chicken for an "Italian" style one or shreaded cheddar with ham and cooked broccoli. You can either make it in a pan with a little olive oil or zap it in the microwave for 30 seconds.

Have you seen the toddler meals in the babyfood section? My kids loved those. As for cooking, I put veggies and pasta in small storage containers and freeze them when I want a quick meal. I sometimes make scrambled eggs and I add frozen or canned mixed veggies in there and some shredded cheese. We eat it wrapped in a tortilla. You can put just about anything in a tortilla. I have even done peanut butter and bananas in them. I also like mac n cheese with broccoli and chicken. I make ramen(without the seasoning) and add veggies to that.

First, I will suggest this website for some great meal/snack ideas:

http://www.wholesometoddlerfood.com/ My son was off baby food by 10 months and was eating everything in site!

Some "fast" things my son enjoys that are healthy is Kashi toaster waffles in the morning with either a little whipped or low fat cream cheese or a little All Natural Preserves (depending on what fruits you've introduced to her already). Quinoa flakes is an excellent breakfast item, too. It can be made into cereal with just a little microwaving time. I mix in All Natural Organic Apple Sauce w/cinnamon and a little honey or Yo Baby Yogurt. Another quick item would just to be to give her some cubed up cheese and a slice of All natural nitrite/nitrate free lunch meat. Check out the website for some more "fast" food ideas...I'm going to try some of those out, myself!
