I don't know how vegetarian you are, but we do penne in pesto with broccoli and cauliflower. Or spaghetti tossed with seasonal veg, olive oil or butter, and some parmesean, red pepper flakes add a nice grown up punch. Vegetable soups are good, bean and rice burritos, veg omlettes of frittatas, stir fries, pasta with marinara. There are lots of possibilities and it doesn't have to all be from scratch. Maybe check out some vegetarian cookbooks at the library for some inspiration. I loved some so much I went out and bought them. But, I will also be the first to admit that we are more flexitarian than vegitarian. I married Mr. Meat and Potatoes, so some headway is better than none and I do enjoy a good cheeseburger from time to time.
