Any suggestions on how to encourage my 2.5 year old to try new foods?

My son seems to have a real problem trying new foods. I try to encourage him to try different tastes and textures and he won't even attempt to even touch some of the food. Yet, if I give him a jar of Gerber veggies he gobbles it down.

My daughter is picky too. She is nearly 4 and her staple item was Mac 'n cheese (which I hate) for some time. Last year she started preschool where they eat incredibly healthy and a variety of items. It's 2 hours of freedom for me, and she had new influences. Now she loves strawberries, which before she didn't. She didn't like cold things and as silly as it sounds, wouldn't try anything that looked cold (even ice cream). Now she has learned it's ok if it's cold. Basically what i learned is that I'm great for cuddling and being her servent (haha) but otherwise she thinks I don't know what I'm talking about. Seeing other children doing something without any pressure makes her willing to do the same and she is more willing to try similar items from me now.

this has worked for me from time to time,

when I made fried squah I told the kids it is called silver dollars and to try it and thay loved it now thay want it all the time,

also if thay want to be big like mommy and daddy thay have to try every thing once and if thay do not like it them at least they tryed something new.
