What are some activities to keep a 2yr old entertained and educate them at the same time?

building with blocks, nature walk/scavenger hunt, check out the blog No Time for Flash Cards (good learning "crafts" and books), helping with household chores and cooking, fingerpainting. There are so many resources online. I was struggling with this and went searching and as I read them I realized I was really just making it too hard. To a 2yo the entire world is a playground and everything is a learning experience. Going to the grocery store is a learning experience. Could you give your child a small notebook with pictures of particular items (clipart or just cut from the ad) that you want him/her to help you find during the trip? I usually pick one thing at the beginning, one in the middle, and one at the end and also pick healthy options (milk, meat, veggies, bread, etc) and we talk a little bit about the item and maybe talk about some of the other items in that same section and how they are alike and different and maybe pick three ingredients for the same recipe for him and talk about what you are going to make with those items and let him help to make it.) You really will be surprised at how much of this your child will be able to take in and also how much their mind (and questioning) expands from activities like this. I know I was!

Playing games on the computer are fun and interactive. I use starfall.com and noggin.com for my children. and they love it!
