I volunteer two days a week at my son's school. I also volunteer two days a week at my local homeless shelters (I am passionate about homelessness, but you can find anything you are passionate about and find a way to dedicate some of your time and energy to it. It is VERY rewarding!)
I also go to the gym 5 days a week--I do a 1/2 hour independent workout, then a 1 hour class workout so that I get to socialize some with the other mom's and women.
I also try to get all of my shopping done during the week--I usually go shopping twice a week, once to the grocery store and farmer's markets, then once to Target and other stores I need to visit.
I am also a member of a mom's book club. I started the club when our children were toddlers, now many of our kids are in school, but we still look forward to our bi-weekly chats and reading good books. (we pick a book, we all read the same book in our free time, then we meet at the library during the toddler's story time to discuss our thoughts).
I try to have brunch or lunch with a girlfriend or two at least once a week, sometimes i don't have time for that, but it's nice when I do.

Look online for different festivals and activities in your area. I live in a fairly small town, but between the library & bookstores, there is a story time for toddlers and preschoolers every single weekday! We don't go to all of them, but I keep them on a list so that if we are board one morning, I know where to go. We have tons of museums and galleries for me to take him to learn about different kinds of art. We also have 3 theater groups in town who do discounted shows during the day about 3-5 times a month, so I take my son to those when I can.

Winters are a little rough here because it's difficult to get out "just for fun" but in the summer time, I love to take my son to the park and chat with other moms. We also have several bike trails close by to visit. Also, just try to get out with your husband and children on the weekends, then having nothing to do come Monday morning is actually kind of nice. I have a light schedule today, and I am happy about it.
