what to do with leftovers.

Last night we had meatloaf, mashed potatoes, and veggies. This morning I made potato cakes with the leftover potatoes and we will have meatloaf sandwiches for lunch. I am so tired of doing the same thing over and over again. What are some suggestions on what to do with leftovers, and I'm not just talking about meatloaf and mashed potatoes. Any suggestions about any kind of leftover would be nice. I hate to throw things away and I just need some new creative ideas.

with extra meats and veggies try making a quiche with them. You do not have to use a pie crust either you can just place a few peices of bread on the bottem of your baking dish to use.

For left over chicken or turkey try this cut up meat mix in a jar of gravy, mixed veggies put into a baking dish top with either left over mashed potatoes or stove top stuffing mix and bake for 20 minutes at 350'F easy cassarole.

left over meat loaf you can cut into chuncks and make spaghetti sauce with it or Swedish meat balls served over egg noodles.

Soups are another good idea. Also rice dishes too.

You should check out the cooking show quick fix meals with robin Miller she takes you through a week of cooking using your Sunday left overs also Semi-homemade too

Also with left over white rice why not make rice pudding as a treat for everyone you can add in some dried fruit to sneak a little bit more into there diet too

Soup is a really easy one and you can put almost anything in it! Also chicken is easy to add to a casserole, pizza, or wrap. We also use leftover rice in wraps. Another great rice one(if you find you sometimes make too much white rice) is what we always called "milk rice". Just add milk to your leftover rice and cook until nice and creamy, cool in the fridge and then add a little sugar and cinnamon and eat it up, love this one!

We freeze our leftovers and my husband takes them for his lunch. I buy either dollarstore plastic containers or disposable containers (we reuse these of course) to freeze the meals in. It allows him to choose what he wants to take instead of always having to take what we had the night before. This works for the kids and I too if I'm not up for making lunch or we are short on time. I make a lot of soups and casseroles as well out of leftovers. It allows us to use the same ingredients, but have a different meal.

In my opinion, chicken is the easiest thing to make leftovers out of. If we have leftover fried chicken, I make chicken salads. Just about any kind of cooked chicken leftover you can make, soups, salad sandwiches, or evern jambalyas. I have a jambalya recipe that has chicken, ham, and sausage in it. It cleans out my fridge everytime! Also if you have leftover meat spagetti sauce, I use the left over sauce for lasanaga.
