Casein free meals

A few weeks ago my son's Occupational Therapist suggested that we try a dairy free diet to see if it would help us with his sleep issues and busy, busy behavior. During the hurricane we went without power for close to a week so that was the perfect time to try the new diet, I could definitely see a difference in him. He was much calmer and didn't seem to get as igitated as he did in the past. Five days ago while at my mom's house he had some BBQ potato chips. He was acting like a mad man that night and refused to sleep. This behavior went on for about two days. I couldn't believe how he was acting, I had never seem him this irratic. After doing some investigating I found out that the potato chips were made with skim milk. Wow, my mom never thought to look at the ingredients for chips. At the point it was confirmed that he is casein intolerant. Now I need help with meals for him. All he wants to eat is chicken nuggets.

Did a quick Google and saw advice for looking into Kosher cooking. Because of the complicated laws surrounding animals and animal byproducts apparently a lot of Kosher recipes don't require dairy. Also saw a lot of advice to avoid processed foods as much as possible. Not sure how helpful that is, if I come across a good recipe site I'll be sure to post it!
