Lunch Ideas??

I'm at home right now and my oldest is just turned 2 in November. I'm trying to think of new lunch/snack ideas but kind of stuck in a rut. I feel like we're just rotating thru crackers, cottage cheese, pasta and peanut butter sandwiches. She's not a big left-over eater so I need some new ideas please!

You could try sandwich sushi!

First cut off the crust off some bread, roller pin the bread flat, shred veggies like carrots, cucumber, red pepper, and cheese. Then layer on a light spread of Mayo, a little ricotta cheese, then add the other ingredients and roll like a sushi roll, and cut.

It is fun and make the sandwiches bit sized and very colorful. It is also a good way to sneak in some veggies.

You can make them with almost anything! A little deli turkey, cream cheese, lettuce. You name it!

(Make sure you don't fill a lot in each roll though. It could cause some bread breakage and a big mess)

Another recipe I like to make are homemade bean nachos.

Take a couple tortilla shells and get some fun cookie cutter shapes and cut them out of the shell.

With the oven at 350 F, oil a pan, and bake the shapes for around 6-7 mins so they are crisp without burning.

In a pan take 3/4 cup of refried beans, one clove of fresh garlic (crushed), and 2 tbs of salsa and cook until it is all mixed together and heated.

Then with the cooled tortilla shapes put a teaspoon or so of the mixture on each shape, add a little shredded cheese, and bake again for another 5 mins to melt the cheese.

It is a great finger food and you can have shapes for any theme. ex) for Halloween we made cat, pumpkins, and bat shapes.

Add a little dollop of Sour creme and enjoy!
