I recommend the Jessica Seinfeld Cook book. Fantastic recipes, all while hiding vegetables. Thankfully my 3 year old eats very well, although I will be thrilled the day he starts eating spinach.

Studies show a direct correlation between what we ate while pregnant and what our children crave as they grow. The same goes for breast feeding. So when you are pregnant and breast feeding what you eat will determine your child's eating habits as they grown up. Eating habits can absolutely change and evolve, but as Elizabeth said you may need to introduce them to a food 20 times before they try it.

List of foods that build our children's brain - Best Grow Foods:

Avocados

Bananas

Beef, lean

Brewer's yeast

Broccoli

Brown rice

Brussel sprouts

Cantaloupe

Cheese

Chicken

Collard greens

Eggs

Flaxseed oil

Legumes

Milk

Oatmeal

Oranges

Peanut butter

Peas

Potatoes

Romaine lettuce

Salmon

Soybeans

Spinach

Tuna

Turkey

Wheat germ

Yogurt

You might also look at Juice Plus as an option. You can get 17 fruits, vegetables and whole grains into your child. I recommend eating your fruits and veggies, but at least you can rest easy knowing they are getting vital nutrients for growth. www.StrengthenNutritionWithJuicePlus.com

Hope that was helpful :).

Here's the thing about kids and foods...they sometimes need to try a food 20 times before they develop an appetite for it. That is the #1 reason why you should never stop serving him exactly the same things you serve the rest of the family...it doesn't matter if he likes it or not..it needs to go on his plate. He should get used to seeing it there and seeing everyone else eat it.

I would highly suggest you start now with your 1 year old..otherwise you will have 2 picky eaters.

Smother them in cheese sauce... hide them (chopped really fine) in tacos (cooked with the meat)... chop them really fine and scramble with eggs... try just leaving chopped veggies in cute shapes for snacking (my kids love "waffles" from any veggie - I use a waffle fry cutter). My girls eat their vegetables with no problem, but I've babysat others who won't... thus the getting inventive! :)

My kid slove to put lemonpepper on veggies. That's the only way they'll eat them. They will eat just about any veggis as long as they can put lemonpepper on them. Cheese sauce is also a good way to get kids to eat the veggies. I've also heard of people pureeing them and adding them to different foods. That way the kid gets the nutrients, but doesn't know the veggies are there.

If your son will eat pasta then disguise the vegetables in the sauce. Vegetables like carrots, courgette, broccoli and sweet potato can be blitzed down and hidden in a tomato sauce. Also let him help you make a pizza with peppers and mushrooms and other vegetables as decorations. Children are more likely to eat food they have helped prepare. Also make things like shepherds pie and instead of just mash potato topping mash carrots and swede in as well. There are lots of ways you can get vegetables into food without them knowing there in there. Just get sneaky!
