First the hitting, time out worked for us really well.  If my son would hit anything (us, toy, chair) out of anger, we firmly told him NO, NO HITTING and put him in time out.  After time out, we told him that hitting is bad and that we use gentle touches (we took his hand and ran it across our hand or arm in a soft touch to show him).  Now, if he gets REALLY angry, he will raise his hand like he is going to hit and we just look at him and say "DON'T HIT, that will put you in time out" and he'll put his hand down and give us a "gentle touch."

As for the tantrums, when possible try distraction to advoid them or even the things that you know will throw her into a tantrum.  However, when they come on in full force, IGNORE IT!  If after a while she does not calm down a little bit, put her in time out and tell her that it is not okay to act this way.

Every child is different and although some sugguestions work for some, they won't for all.  You have to find what works best for your family.  GOOD LUCK!!!
