Need tips on making healthy sandwiches!

My 17 month old used to be a "fruit-aholic" and "cheese-aholic". As in, she'd eat any fruits any time of day or night, same with cheese, and thats about it! Now, she suddenly will only eat sandwiches. I don't know how to get soft veggies into sandwiches (I usually use things like crunchy lettuce and tomatos, which are hard for her to eat) and the only fruity sandwich I can think of is peanut butter and banana! Besides manwich, all she's getting in sandwiches is meat and cheese. Any suggestions or recipe sites you know of that can help?

Try using yogurt and berries on toasted bread.
or make a fruit puree and pair it with cream cheese.
also cucumber and cream cheese is good.

I got this recipe from the book Deceptively Delicious, an awesome book. 1/2 a cup of shredded cheddar cheese, 1/2 sweet potato puree or butternut sqash puree, 1 tablespoon of trans-fat free margarine spread, 1/4 teaspoon of salt, 4 slices of bread, (they say to use whole wheat but you could use white) non stick cooking spray, 1 teaspoon of olive oil. In a bowl mix together the cheese, puree, margarine , and salt. Spray the skillet over medium heat, when the skittet is hot add the oil. Spray the sandwiches with cooking spray, then cook until filling is melted and bread is crisp. The recipe makes two grilled cheese sandwiches.
What I like to do is make my puree then freeze it. Sweet potato puree is also good to add to pancakes. I don't know if your daughter will eat English Muffin pizza but if she does try spreading some spinach puree on the muffin before putting on the sauce. Good luck. They are hard to feed at this age aren't they?

my 23 month old will not eat meat... so we give her peanut butter and Jelly or Cheese and mustard sandwiches...

That sounds yummy! I will definitely try it! Thanks Erin. Yeah, they are difficult with just about EVERYTHING at this age. Terrible 2s my butt ... lol
